Lauki Chana Sabji

Detailed Lauki Chana Dal Sabji Recipe (Sattvik Style)

Lauki Chana Sabji bridges the gap between a thick curry and a traditional dal. By combining deeply hydrating bottle gourd with nutty, protein-dense Bengal gram (Chana Dal), you achieve a perfectly balanced, profoundly satisfying, rustic preparation.

1. Ingredients

  • Bottle Gourd (Lauki/Sorakkai): 2 cups (peeled, core removed if seedy, diced into medium chunks).
  • Chana Dal (Bengal Gram): 1/2 cup (soaked in hot water for exactly 1 hour).
  • Tomatoes: 2 medium (finely chopped).
  • Ghee: 2 tablespoons.
  • Cumin Seeds: 1 tsp.
  • Ginger: 1 inch (finely grated).
  • Green Chilies: 1-2 (slit).
  • Turmeric Powder: 1/2 tsp.
  • Coriander Powder: 1 tsp.
  • Garam Masala: 1/2 tsp.
  • Hing (Asafoetida): 1/4 tsp.
  • Salt: To taste.
  • Fresh Coriander: Generous handful.

2. How to Cook - Step-by-Step Guidance

Step 1: Test the Gourd Critical Step: Taste a raw sliver of the bottle gourd. If it is bitter, discard the entire vegetable. It should taste crisp and slightly sweet.

Step 2: Parboil the Dal Drain the soaked Chana dal. Boil it in an open pot or pressure cooker with turmeric and water until it is 70% cooked (tender, but definitely holds its shape; it should not turn to mush).

Step 3: Prepare the Base Heat ghee in a pot or kadhai. Add cumin seeds to crackle. Add the grated ginger, green chilies, and hing. Sauté for 20 seconds.

Step 4: Incorporate Tomatoes Add the chopped tomatoes, turmeric, and coriander powder. Sauté on medium heat for 4 minutes until the tomatoes begin to soften and release moisture.

Step 5: The Unification Add the diced lauki and the parboiled Chana dal (along with any remaining water from the dal). Add salt. Stir everything incredibly well so the spices coat the vegetables.

Step 6: The Long Simmer Cover the pot tightly with a lid and cook on medium-low heat for 12-15 minutes. The lauki will drop its own water, creating a stunning, naturally sweet broth where the Chana dal finally finishes cooking to buttery softness. Open the lid, sprinkle garam masala, and garnish with fresh coriander.

3. What are the Health Benefits?

  • Perfect Macro Balance: Flawlessly combines the extreme hydration and alkalinity of the bottle gourd with the rugged, slow-digesting protein of the Chana dal.
  • Deep Liver Satiety: Rehydrates an exhausted liver, making it an excellent recovery meal postpartum or post-illness.
  • Cholesterol Control: The high fiber in the Chana dal binds to bile acids securely, naturally stripping cholesterol from the body.

4. Who Can Avoid?

  • Severe Gas / Vata Imbalance: Chana dal is notoriously difficult to digest for weak stomachs (producing Vata/gas). Ensure you soak the dal thoroughly, do not skip the hing/ginger, and ensure the dal is perfectly soft before consuming.
