Palak Paneer

Detailed Palak Paneer Recipe (Sattvik Style)

Palak Paneer is arguably the most recognizable paneer dish in the world. Sattvik Palak Paneer completely avoids the heavy, lethargic qualities of onions and garlic, relying instead on pure pureed spinach, a hint of cream, and fresh paneer to create a spiritually uplifting masterpiece.

1. Ingredients

  • Spinach (Palak): 1 large bunch (leaves only, washed).
  • Paneer: 200 grams (cut into bite-sized cubes).
  • Tomato: 2 medium (pureed).
  • Ghee: 2 tablespoons.
  • Cumin Seeds: 1 tsp.
  • Ginger: 1 inch piece.
  • Green Chilies: 2.
  • Turmeric Powder: 1/4 tsp.
  • Coriander Powder: 1 tsp.
  • Garam Masala: 1/2 tsp.
  • Kasuri Methi: 1 tsp (crushed).
  • Fresh Cream: 2 tablespoons (optional).
  • Salt: To taste.

2. How to Cook - Step-by-Step Guidance

Step 1: Blanch and Shock Bring a pot of water to a boil. Drop the spinach leaves in for exactly 1 minute until they just wilt. Remove them instantly and plunge them into a bowl of ice-cold water. This shocking process locks in the bright, emerald green color.

Step 2: The Green Puree Blend the blanched spinach, 1 green chili, and half the ginger into a very smooth puree.

Step 3: Sauté the Tomato Base Heat the ghee in a kadhai. Add cumin seeds. Once they splutter, add the remaining grated ginger and the other slit green chili. Immediately pour in the pureed tomatoes, turmeric, and coriander powder. Sauté rapidly for 5-7 minutes until the tomatoes cook entirely and release the ghee.

Step 4: Bring the Green Pour the vibrant spinach puree into the cooked tomato base. Add salt. Simmer on low heat for exactly 3 minutes to warm it through and remove any raw spinach edge. Do not over-boil, or the gravy will turn dark, murky brown.

Step 5: Add the Paneer Gently slip the raw paneer cubes into the simmering green gravy. Add the Kasuri Methi and garam masala. Let the paneer heat through for 2 minutes and absorb the flavors.

Step 6: Creamy Finish Turn off the heat. Drizzle the fresh cream over the top to finish the dish. Serve immediately.

3. What are the Health Benefits?

  • Complete Biological Meal: The paneer provides robust fat and protein, while the spinach delivers massive doses of iron, calcium, and essential roughage.
  • Ojas Building: The use of paneer, ghee, and cream natively builds Ojas, giving the skin a healthy glow and fortifying the immune system physically and psychologically.
  • Bone Density: The ultimate calcium and Vitamin K powerhouse.

4. Who Can Avoid?

  • Sluggish Digestion (Kapha): Palak Paneer is a "Guru" (heavy) dish due to the dense combination of dairy protein and fibrous greens. Those with weak gastric fires should eat it during lunchtime only.
