Paneer Capsicum Sabji
Detailed Paneer Capsicum Sabji (Kadai Paneer Style) Recipe (Sattvik Style)
Paneer Capsicum is a vibrant, semi-dry dish reminiscent of restaurant-style Kadai Paneer, but made entirely Sattvik. The crunchy, sweet bell peppers and the soft paneer rely on a freshly roasted, coarse spice blend (Kadai Masala) rather than a heavy gravy.
1. Ingredients
- Paneer: 200 grams (cut into thick cubes or strips).
- Capsicum (Bell Peppers): 2 large (deseeded and cut into chunky squares; mixed colors look fantastic).
- Tomato: 2 medium (1 pureed, 1 chopped aggressively into chunks).
- Ghee or Oil: 2 tablespoons.
- Ginger: 1 inch (julienned into thin matchsticks).
- Salt: To taste.
- Fresh Coriander: Handful.
- For the Fresh Kadai Masala:
- 1.5 tbsp Coriander seeds
- 1 tsp Cumin seeds
- 1/2 tsp Fennel seeds (Saunf)
- 1/2 tsp Black Peppercorns
- 3-4 Dried Red Chilies
2. How to Cook - Step-by-Step Guidance
Step 1: The Essential Kadai Masala Dry roast the coriander seeds, cumin, fennel, peppercorns, and red chilies in a pan on very low heat until deeply aromatic and golden. Let cool. Grind them into a coarse powder in a mortar-pestle or blender. Do not make it a fine dust; the texture is key.
Step 2: Sauté the Chunks Heat 1 tablespoon of ghee in a kadhai. Sauté the capsicum chunks and paneer cubes on high heat for 3-4 minutes. The capsicum should get slight blisters but stay crunchy, and the paneer should turn slightly golden. Remove both from the pan.
Step 3: The Tomato Base In the same pan, heat the remaining 1 tablespoon of ghee. Add the julienned ginger and sauté briefly. Pour in the pureed tomato and salt. Cook for 5 minutes until the tomato reduces to a thick paste.
Step 4: Bring the Spice Add 2 tablespoons of your freshly ground coarse Kadai Masala into the tomato paste. Stir extremely well. Add the raw, chunky chopped tomato pieces now.
Step 5: Toss and Finish Add the sautéed paneer and capsicum back into the pan. Toss everything aggressively but carefully on medium-high heat for 3 minutes so the coarse, spicy tomato paste securely coats the capsicum and paneer.
Step 6: Serve Turn off the heat. The sabji should be entirely coated, dry, and glistening. Garnish with fresh coriander.
3. What are the Health Benefits?
- Vitamin C Synergy: Capsicum provides enormous Vitamin C, which protects immunity.
- Digestive Fire Stimulant: The freshly roasted coarse spices (especially black pepper and ginger) strongly stoke the Agni, ensuring that the heavy paneer is digested easily without creating toxins (Ama).
- High Protein: Keeps energy high and repairs muscles effectively.
4. Who Can Avoid?
- Nightshade Sensitivities: Relies heavily on capsicum and tomatoes. Those with severe autoimmune inflammation or joint sensitivity to nightshades should avoid it entirely.
- High Pitta (Acidity): The robust use of dry spices, chilies, and tomatoes can increase internal heat. Eat in moderation.
