Paneer Peas Sabji

Detailed Paneer Peas Sabji (Matar Paneer) Recipe (Sattvik Style)

Matar Paneer is arguably the most famous everyday paneer dish. The sweet explosions of fresh green peas cut right through the rich, heavy paneer, creating a perfectly balanced curry suspended in a spiced tomato gravy.

1. Ingredients

  • Paneer: 200 grams (cubed).
  • Green Peas (Matar): 1 cup (preferably fresh, or thawed frozen).
  • Tomatoes: 3 large (pureed into a smooth paste).
  • Ghee or Oil: 2 tablespoons.
  • Cumin Seeds: 1 tsp.
  • Ginger: 1 inch (finely grated or paste).
  • Green Chilies: 1-2 (slit).
  • Turmeric Powder: 1/2 tsp.
  • Coriander Powder: 1.5 tsp.
  • Kashmiri Red Chili Powder: 1 tsp.
  • Garam Masala: 1/2 tsp.
  • Kasuri Methi: 1 tbsp.
  • Cashew Powder: 1 tbsp (optional, to thicken gravy).
  • Water: 1.5 cups.
  • Salt: To taste.

2. How to Cook - Step-by-Step Guidance

Step 1: Soften the Paneer (Optional) Shallow fry the paneer cubes in a drop of ghee until pale gold. Immediately submerge them in warm water for 10 minutes. This secret step guarantees melt-in-the-mouth softness.

Step 2: The Tempering Heat ghee in a kadhai. Add cumin seeds. Once they splutter, add the ginger and green chilies, sautéing for a few seconds.

Step 3: Spice and Tomato Base Turn the heat to low. Add turmeric, coriander powder, and Kashmiri chili powder to the oil for 3 seconds. Immediately pour in the pureed tomatoes and cashew powder (if using). Add salt.

Step 4: Cook the Masala Cook the tomato base on medium heat for 7-10 minutes. Wait until the raw smell vanishes, the mixture thickens significantly, and oil glimmers around the edges.

Step 5: Simmer with Peas Add the green peas and 1.5 cups of hot water. Bring to a boil, cover, and let it simmer for 8-10 minutes until the peas are tender and sweet.

Step 6: Final Incorporation Squeeze the paneer lightly to remove excess water and drop them into the simmering gravy. Add crushed Kasuri methi and garam masala. Let it simmer for just 2-3 minutes. Turn off the heat and garnish heavily with fresh coriander.

3. What are the Health Benefits?

  • Complete Nutritional Profile: The union of paneer (fat and protein), peas (carbohydrates and protein), and tomatoes (vitamins) makes this a biologically complete meal.
  • Sustained Satiety: The digestion of paneer takes significantly longer than simple carbohydrates, keeping blood sugar stable and preventing hunger pangs.
  • Lycopene Defense: The heavily cooked tomato base acts as a powerful antioxidant protecting cardiovascular integrity.

4. Who Can Avoid?

  • Lactose Intolerance: Due to the heavy reliance on paneer, those with severe dairy protein (casein) intolerances should substitute with extremely firm tofu.
