Paneer Butter Sabji

Detailed Paneer Butter Sabji (Paneer Makhani) Recipe (Sattvik Style)

Paneer Butter Sabji (commonly known as Paneer Makhani) is a crown jewel of North Indian festive cooking. By foregoing onions and garlic, the pure, sweet creaminess of the tomatoes, cashews, butter, and paneer combine to create a deeply luxurious and sattvik offering.

1. Ingredients

  • Paneer: 250 grams (cut into neat cubes or triangles).
  • Tomatoes: 5 large, deep red tomatoes (roughly chopped).
  • Cashews: 15 whole cashews (soaked in warm water for 15 mins).
  • Butter: 2 tablespoons.
  • Ghee: 1 tablespoon.
  • Whole Spices: 1 inch cinnamon, 2 green cardamoms, 1 bay leaf.
  • Ginger: 1/2 inch.
  • Green Chili: 1.
  • Kashmiri Red Chili Powder: 1.5 tsp (crucial for the bright red color without immense heat).
  • Garam Masala: 1/2 tsp.
  • Kasuri Methi: 1 tbsp (crushed).
  • Fresh Cream: 2-3 tablespoons (optional, for final richness).
  • Salt: To taste.

2. How to Cook - Step-by-Step Guidance

Step 1: The Makhani Base Boil In a pot, boil the roughly chopped tomatoes, soaked cashews, ginger, green chili, cardamom, and cinnamon in 1 cup of water. Boil aggressively until the tomatoes completely break down and the cashews are soft (about 12 minutes). Let it cool.

Step 2: The Velvet Blending Remove the cinnamon stick and bay leaf (if you boiled it). Blend the entire tomato-cashew mixture into an absolutely smooth, fine paste. For restaurant-quality texture, strain this puree through a sieve.

Step 3: The Golden Butter Sauté Heat the butter and ghee together in a pan over low heat (butter burns easily). Add the Kashmiri red chili powder directly to the fat for just 3 seconds to bloom its stunning red color.

Step 4: Simmer the Gravy Immediately pour the strained tomato-cashew puree into the buttery pan. Add salt. Let the gravy simmer on low heat for 8-10 minutes. The gravy will thicken and turn shiny.

Step 5: Introduce the Paneer Gently fold the raw paneer cubes into the simmering gravy. Add the crushed Kasuri Methi and garam masala. Let the paneer heat through in the gravy for exactly 3-4 minutes so it remains incredibly soft.

Step 6: Finish with Cream Turn off the heat. Drizzle the fresh cream over the top and stir very gently. Serve hot with naan or jeera rice.

3. What are the Health Benefits?

  • High Density Protein: Paneer provides excellent, sustainable vegetarian protein necessary for tissue repair.
  • Nourishes the Nervous System: Cashews and butter naturally calm extreme Vata (anxiety, dryness) by heavily lubricating the body and nerves.
  • Bone Health: Extremely calcium-rich due to the combination of dairy (paneer, butter, cream).

4. Who Can Avoid?

  • Weight Loss / High Cholesterol Regimes: Because this dish is loaded with saturated fats (butter, cream, paneer, and cashews), it is extremely heavy (Guru). It should be reserved for festivals or intense physical labor days.
