Mixed Vegetable Sabji

Detailed Mixed Vegetable Sabji Recipe (Sattvik Style)

Mixed Vegetable Sabji is an incredibly vibrant, everyday curry that unites the textures and nutrients of several vegetables into a single, cohesive, mildly spiced tomato gravy. It acts as an excellent strategy to utilize small amounts of leftover seasonal vegetables.

1. Ingredients

  • Mixed Vegetables: 3 cups (diced carrots, french beans, cauliflower florets, potatoes, and green peas).
  • Tomatoes: 3 large (pureed).
  • Ghee or Oil: 2 tablespoons.
  • Cumin Seeds: 1 tsp.
  • Ginger: 1 inch (finely grated).
  • Green Chilies: 1 to 2 (slit).
  • Turmeric Powder: 1/2 tsp.
  • Coriander Powder: 1.5 tsp.
  • Kashmiri Red Chili Powder: 1 tsp.
  • Garam Masala: 1/2 tsp.
  • Kasuri Methi (Dried Fenugreek): 1 tbsp (crushed).
  • Cashew Paste: 2 tbsp (optional, for restaurant-style richness).
  • Salt: To taste.
  • Water: 1.5 cups.

2. How to Cook - Step-by-Step Guidance

Step 1: Parboil the Hard Vegetables In a pot of boiling water, briefly blanch the carrots, french beans, potatoes, and cauliflower for 4-5 minutes so they are 70% cooked. Drain and set aside. (You can also shallow fry them in ghee for a richer taste).

Step 2: The Tempering Heat ghee in a heavy-bottomed kadhai. Add cumin seeds and let them splutter. Add the grated ginger and green chilies. Sauté for 30 seconds.

Step 3: The Tomato Base Pour the pureed tomatoes into the pan. Immediately add the turmeric, coriander powder, Kashmiri chili powder, and salt.

Step 4: Cook the Masala Cook the tomato mixture on medium heat for 7-10 minutes. The base must thicken significantly, and the ghee should begin separating from the edges of the paste, indicating the spices have fully bloomed. If using cashew paste, stir it in now and cook for another 2 minutes.

Step 5: Simmer the Vegetables Fold all the parboiled vegetables and green peas into the thick tomato base. Add about 1.5 cups of hot water (adjust to desired thickness). Bring to a boil, cover, and simmer aggressively on low heat for 8 minutes until all vegetables are fully tender.

Step 6: Flavor Finishing Crush the Kasuri Methi between your palms and sprinkle it into the curry along with the garam masala. Turn off the heat. Garnish with fresh coriander before offering.

3. What are the Health Benefits?

  • Comprehensive Array of Nutrients: Provides an incredibly wide spectrum of vitamins, minerals, and antioxidants from five different vegetable families in one meal.
  • Steady Digestion: The very high insoluble fiber content from the beans and carrots ensures blood sugar levels remain completely stable post-meal.
  • Immunity: The rich tomato and spice base acts as a natural immune booster.

4. Who Can Avoid?

  • Weak Agni (Poor Digestion): Those with compromised digestion may find digesting 5-6 different vegetables simultaneously to be taxing. In such cases, mono-diets or simply cooked bottle gourd are safer.
