Brinjal Peanut Curry
Detailed Brinjal Peanut Curry (Gutti Vankaya Style) Recipe (Sattvik Style)
Brinjal Peanut Curry (akin to Andhra's Gutti Vankaya without onions/garlic) elevates the tender eggplant by stuffing and simmering it in an intensely nutty, rich, and slightly spicy roasted peanut gravy.
1. Ingredients
- Brinjals: 8 small, tender, round brinjals (slit into a cross from the bottom, stems intact).
- Tamarind Extract: 1 small lemon-sized ball (for a mild tang).
- Ghee / Oil: 3 tablespoons.
- Mustard Seeds: 1 tsp.
- Cumin Seeds: 1/2 tsp.
- Curry Leaves: A sprig.
- Salt: To taste.
- For the Stuffed Nut Paste:
- 1/2 cup Peanuts (dry roasted, skins rubbed off).
- 2 tbsp Sesame Seeds (dry roasted until popping).
- 1 tbsp Coriander Powder
- 1 tsp Kashmiri Red Chili Powder
- 1/2 tsp Turmeric Powder
- 1/2 tsp Cumin Powder
- 1 inch Ginger (grated)
2. How to Cook - Step-by-Step Guidance
Step 1: Grind the Peanut Masala In a blender, combine the roasted peanuts, roasted sesame seeds, coriander powder, chili powder, turmeric, cumin powder, grated ginger, and salt. Grind into a slightly coarse powder. Add a few drops of water to make it a thick, stuffable paste.
Step 2: Stuff the Brinjals Gently pry open the slit brinjals and stuff them generously with the thick peanut masala paste. Reserve any leftover paste for the gravy.
Step 3: Sear the Stuffed Brinjals Heat oil in a wide, heavy-bottomed Kadai. Place the stuffed brinjals inside carefully. Sauté on medium-low heat for 6-8 minutes. Rotate them gently so the skin blisters on all sides and they soften by 60%.
Step 4: Build the Gravy Remove the brinjals carefully. In the remaining oil, add mustard seeds and cumin seeds to crackle. Add curry leaves. Pour in the tamarind extract and whatever peanut masala paste was left over.
Step 5: Simmer Add about 1.5 cups of hot water to the pan to form a gravy. Bring it to a boil. Gently place the stuffed brinjals back into the gravy.
Step 6: The Long 'Dum' Cover the Kadai tightly. Simmer on low heat for 12-15 minutes. The peanut oils will release into the gravy, turning it rich, thick, and distinctly nutty, while the brinjals melt completely. Serve hot.
3. What are the Health Benefits?
- Massive Energy Density: Peanuts and sesame seeds provide an enormous amount of healthy fats and dense caloric energy, perfect for hard labor or extremely cold weather.
- Bone Health: Sesame seeds offer massive bio-available calcium, supporting skeletal integrity.
- Vata Grounding: The extreme heaviness and oiliness of this dish radically pacifies severe Vata dosha (anxiety, dryness, weakness).
4. Who Can Avoid?
- Heavy Digestion (High Kapha): Because it features an oil-rich peanut and sesame base, it is an extremely "Guru" (heavy to digest) meal. It should be avoided by those with slow metabolisms or trying to lose weight.
