Snake Gourd Sabji
Detailed Snake Gourd Sabji (Pudalangai Poriyal) Recipe (Sattvik Style)
Snake Gourd Poriyal is a classic dry preparation from South India. Tempered with lentils and finished with fresh coconut, it provides a delightful crunch while remaining astoundingly light on the stomach.
1. Ingredients
- Snake Gourd (Pudalangai): 1 large. (Scrape the waxy outer layer lightly with a knife. Split, remove the soft, spongy seed core, and slice into thin half-moons).
- Moong Dal (Yellow Lentils): 2 tablespoons (soaked for 30 minutes).
- Fresh Coconut: 3 tablespoons (grated).
- Coconut Oil: 1 tablespoon.
- Mustard Seeds: 1 tsp.
- Urad Dal: 1 tsp.
- Dried Red Chilies or Green Chilies: 1 to 2.
- Curry Leaves: A sprig.
- Hing (Asafoetida): A pinch.
- Salt: To taste.
2. How to Cook - Step-by-Step Guidance
Step 1: Tempering Line a wide pan with coconut oil and apply medium heat. Add the mustard seeds. Once they pop aggressively, add the urad dal and fry until it reaches a crunchy, golden-brown hue.
Step 2: Aromatics Add the broken red or green chilies, a pinch of hing, and the curry leaves. Let them sizzle for just 10 seconds.
Step 3: Stir-Fry the Gourd Add the sliced snake gourd and salt to the pan. Toss continuously for 3-4 minutes so the tempered oil coats all the pieces securely.
Step 4: Steam with Dal Drain the soaked moong dal and add it to the pan. Sprinkle about 2-3 tablespoons of water over the mixture. Cover tightly. Cook on low heat for 7-10 minutes. The gourd and the dal should both cook until tender but remain firm—do not let them turn into a mushy paste.
Step 5: The Coconut Finish Once the water has evaporated and the vegetables are cooked, turn the heat to the lowest setting. Fold in the fresh grated coconut. Mix for 1 minute just to warm the coconut.
Step 6: Serve Turn off the heat entirely and serve warm.
3. What are the Health Benefits?
- Heart Expectorant: Gently expands the blood vessels and protects cardiovascular integrity while easing blood pressure.
- Diabetic Friendly: Provides intense roughage and very few carbohydrates, eliminating the risk of glucose spikes.
- Bowel Regulation: The high fiber content in both the gourd and the dal acts as a potent, natural remedy for chronic constipation.
4. Who Can Avoid?
- Digestive Weakness: If you suffer from severe gas (Vata issues), ensure you chew the firm snake gourd pieces thoroughly, or cook them slightly longer than average until totally soft.
