Bottle Gourd Sabji

Detailed Bottle Gourd Sabji (Lauki Ki Sabji) Recipe (Sattvik Style)

Lauki ki Sabji is the absolute pinnacle of easy digestion. Often given to the sick, elderly, or those fasting (consuming sattvik diets), it is practically 90% water. Cooked simply with minimal spices, it heals and cools your entire system.

1. Ingredients

  • Bottle Gourd (Lauki/Sorakkai): 1 medium-sized (peeled, any hard core seeds removed, diced into small cubes).
  • Tomato: 1 medium (chopped).
  • Ghee: 1.5 tablespoons.
  • Cumin Seeds: 1 tsp.
  • Ginger: 1/2 inch (finely grated).
  • Green Chili: 1 (slit, use mild).
  • Turmeric Powder: 1/4 tsp.
  • Coriander Powder: 1/2 tsp.
  • Salt: To taste.
  • Fresh Coriander: A handful, chopped.

2. How to Cook - Step-by-Step Guidance

Step 1: Test the Lauki (Critical) Always cut a tiny, raw piece of the bottle gourd and taste it. If it is overwhelmingly bitter, discarding the entire vegetable is absolutely mandatory, as bitter lauki contains a highly toxic compound (Cucurbitacin) that can cause severe illness. It must taste sweet and mild.

Step 2: Tempering In a pressure cooker or covered pot, heat the ghee. Add the cumin seeds and let them sizzle until slightly golden-brown.

Step 3: Aromatics & Tomato Add the grated ginger and slit green chili, sautéing for a few seconds. Toss in the chopped tomato, turmeric, and coriander powder. Sauté for 2-3 minutes until the tomato softens slightly.

Step 4: Cook the Gourd Add the diced bottle gourd and salt to the pan. Mix well.

Step 5: The Water Release You rarely need to add water. Lauki will release an enormous amount of its own moisture. If cooking in a pot, cover it tightly and simmer on medium-low for 10-15 minutes until it is completely translucent and soft. If using a pressure cooker, close the lid and cook for just 1-2 whistles.

Step 6: Evaporate or Serve Soupy If cooking in a pot, it will resemble a Soupy stew. You can boil it aggressively for a few minutes uncovered if you want a drier sabji, or serve the nutritious broth as is. Turn off the heat and heavily garnish with fresh coriander.

3. What are the Health Benefits?

  • Extreme Hydration: Lauki maintains hydration levels in the deepest tissues of the body, combating the extreme drying effects of hot summer days.
  • Cooling Pitta: Its alkaline nature neutralizes stomach acid, heavily suppressing heartburn, acid reflux, and internal inflammation.
  • Weight Management: The dish uses very few calories while offering immense volume, filling the stomach and suppressing appetite naturally.

4. Who Can Avoid?

  • Severe Colds/Asthma: Because it drops the body’s internal temperature drastically, consuming heavily cooling gourds at night during deep winter or while suffering from an active chest cold (Kapha imbalance) is discouraged.
