Beetroot Poriyal

Detailed Beetroot Poriyal / Sabji Recipe (Sattvik Style)

Beetroot Poriyal is a jewel-toned dish where the profound earthiness of the beets is perfectly offset by a sharp tempering of mustard seeds and a blanket of sweet, fresh coconut.

1. Ingredients

  • Beetroot: 2 medium-sized (peeled and finely diced into small cubes or grated).
  • Fresh Coconut: 3 tablespoons (grated).
  • Coconut Oil: 1.5 tablespoons.
  • Mustard Seeds: 1 tsp.
  • Urad Dal: 1 tsp.
  • Green Chilies or Dry Red Chilies: 1 to 2.
  • Curry Leaves: A sprig.
  • Hing (Asafoetida): 1/4 tsp.
  • Salt: To taste.

2. How to Cook - Step-by-Step Guidance

Step 1: Prep the Beetroot Dicing the beetroot finely is crucial. Large cubes take too long to cook and remain hard inside. Grating cooks fastest, but fine dicing offers the best texture.

Step 2: Tempering the Oil Heat coconut oil in a pan. Add the mustard seeds and let them splutter. Add the urad dal, roasting it until it turns an aromatic, crunchy golden brown. Add the chilies, hing, and curry leaves.

Step 3: Sautéing the Roots Toss the diced beetroot into the pan. Add salt. Sauté on medium-high heat for 2 minutes.

Step 4: The Slow Cook Sprinkle exactly 2 to 3 tablespoons of water over the beetroot to generate steam. Cover the pan with a tight-fitting lid. Cook on low heat for about 10-12 minutes. Check every 4 minutes and stir; if it looks completely dry, sprinkle another few drops of water. Do not flood the pan, or it will turn mushy.

Step 5: Check for Tenderness Once a fork passes easily through the beetroot cubes, remove the lid. If there is residual moisture, stir-fry on high until dry.

Step 6: The Coconut Blanket Turn the heat to its lowest setting. Fold in the fresh grated coconut. Mix gently so the white flakes take on a stunning pink hue. Turn off the heat and serve.

3. What are the Health Benefits?

  • Nitric Oxide Producer: Beetroot naturally converts dietary nitrates into nitric oxide in the body, dramatically relaxing blood vessels, lowering blood pressure, and boosting physical stamina.
  • Liver Shield: High concentrations of betaine protect the liver from oxidative stress and encourage it to flush toxins safely.
  • Hemoglobin Booster: Revered in natural medicine as a supreme remedy for anemia and low red blood cell counts.

4. Who Can Avoid?

  • Kidney Stone Prone: Beetroots are incredibly high in oxalates. Those with a confirmed history of calcium-oxalate kidney stones must eat this heavily moderated, or skip the vegetable altogether.
