Carrot Beans Sabji

Detailed Carrot & Beans Poriyal Recipe (Sattvik Style)

Carrot and Beans Poriyal is visually striking with its dual tones of bright orange and deep green. Tempered with crunchy lentils and finished with fresh coconut, it is a staple South Indian side dish known for its mildness and crispness.

1. Ingredients

  • Carrots: 1 cup (finely diced).
  • Green Beans (French Beans/Haricot Beans): 1 cup (finely chopped, stringed if necessary).
  • Fresh Coconut: 3 tablespoons (grated).
  • Coconut Oil (or Cooking Oil): 1 tablespoon.
  • Mustard Seeds: 1 tsp.
  • Urad Dal: 1 tsp.
  • Chana Dal: 1/2 tsp.
  • Dried Red Chilies: 1 to 2 (broken into halves).
  • Curry Leaves: 1 sprig.
  • Hing (Asafoetida): A tiny pinch.
  • Turmeric Powder: 1/4 tsp (optional).
  • Salt: To taste.

2. How to Cook - Step-by-Step Guidance

Step 1: Blanching the Vegetables Bring a pot of slightly salted water to a rolling boil. Add the diced carrots and beans. Boil for strictly 3-4 minutes until they are 80% tender. Drain them entirely. Alternatively, you can directly sauté them in the pan, but blanching preserves their brilliant colors.

Step 2: The Essential Crunch Tadka Heat the coconut oil in a wide pan. Throw in the mustard seeds and allow them to crackle fully. Add the urad and chana dal. Sauté on medium-low until the lentils turn a deep, toasted golden brown. This crunch is critical to the dish's identity.

Step 3: Aromatics Add the broken red chilies, hing, and fresh curry leaves to the hot oil. They should sizzle violently for about ten seconds.

Step 4: Stir-Fry Toss the blanched carrots, beans, and turmeric (if using) into the pan. Stir-fry for about 2-3 minutes. Because they were pre-cooked, you are just infusing them with the tempered oils. Season with salt.

Step 5: The Coconut Finish Lower the heat. Add the freshly grated coconut. Mix for a final 30 seconds until the coconut is warm but retains its white color. Turn off the heat entirely and serve warm.

3. What are the Health Benefits?

  • Antioxidant Overload: Combines the massive beta-carotene (Vitamin A) of carrots with the chlorophyll and flavonoids found in young beans.
  • Blood Sugar Grounding: Low in calories and extremely high in soluble fiber, slowing down digestion and providing steady energy levels.
  • Cooling Ojas: The fresh coconut naturally creates Ojas (vital immunity essence) in Ayurveda, while cooling down stomach acidity.

4. Who Can Avoid?

  • Digestive Weakness (Vata): If an individual suffers from chronic indigestion or gas, ensure the beans and carrots are steamed entirely soft (100%) rather than keeping them crisp, as raw-ish vegetables tax weak digestion.
