Cabbage Peas Sabji

Detailed Cabbage Peas Sabji Recipe (Sattvik Style)

This dish combines the mild sulfurous crunch of shredded cabbage with the sudden, sweet explosions of fresh green peas. It is an incredibly fast, vibrant, and deeply comforting dry sabji that pairs perfectly with warm dal and rice.

1. Ingredients

  • Cabbage: 3 cups (finely shredded or chopped).
  • Green Peas (Matar): 3/4 cup (fresh or thawed frozen peas).
  • Oil/Ghee: 1.5 tablespoons.
  • Mustard Seeds: 1/2 tsp.
  • Cumin Seeds: 1/2 tsp.
  • Green Chilies: 1-2 (slit or finely chopped).
  • Ginger: 1/2 inch (finely grated).
  • Turmeric Powder: 1/2 tsp.
  • Coriander Powder: 1 tsp.
  • Hing (Asafoetida): A pinch.
  • Salt: To taste.
  • Fresh Coriander: Handful (chopped).

2. How to Cook - Step-by-Step Guidance

Step 1: Tempering the Oil Heat the oil or ghee in a heavy-bottomed kadhai. Add the mustard seeds and let them splutter. Add the cumin seeds, letting them turn slightly brown.

Step 2: Aromatics Immediately add the grated ginger, green chilies, and a pinch of hing. Sauté for just a few seconds until fragrant.

Step 3: Sweeten the Peas Add the green peas to the pan. If using fresh peas, sauté them for 2-3 minutes with a tiny splash of water until they become tender and bright green.

Step 4: Wilt the Cabbage Add the shredded cabbage, turmeric powder, coriander powder, and salt. Toss the cabbage and peas vigorously until the spices coat all the vegetables.

Step 5: The Semi-Steam Method Unlike plain cabbage poriyal, you want a slightly softer texture here to match the peas. Turn the heat to medium-low, cover with a lid, and cook for exactly 3-4 minutes. Do not add water; the cabbage will release its own moisture.

Step 6: Final Roast Remove the lid. If there is excess water pooling at the bottom, turn the heat up to medium-high and stir-fry for 1 minute until all the water entirely evaporates. Turn off the heat. Garnish with fresh coriander leaves.

3. What are the Health Benefits?

  • Protein & Roughage Combo: The peas provide dense plant protein, while the cabbage provides intense roughage, resulting in a meal that cleanses the digestive tract while keeping you satiated.
  • Vitamin K Engine: Exceptionally rich in Vitamin K, playing a pivotal role in blood clotting and bone metabolism.
  • Low Glycemic Index: The lack of starchy vegetables prevents blood sugar spikes.

4. Who Can Avoid?

  • Hypothyroidism: As an extension of the cruciferous family, those with unmanaged thyroid conditions should ensure the cabbage is heavily cooked (sweated down fully) to deactivate goitrogenic compounds before consuming.
