Cabbage Sabji
Detailed Cabbage Sabji / Poriyal Recipe (Sattvik Style)
Cabbage Poriyal is an extraordinarily light, sweet, and crunchy dish. By quickly stir-frying shredded cabbage with mustard seeds and fresh coconut, this dish retains maximum nutrition and vibrant color.
1. Ingredients
- Cabbage: 3 to 4 cups (finely shredded, washed, and completely drained).
- Fresh Coconut: 3-4 tablespoons (grated).
- Oil: 1 tablespoon (coconut oil is highly recommended).
- Mustard Seeds: 1 tsp.
- Urad Dal: 1 tsp.
- Chana Dal: 1 tsp.
- Green Chilies: 1-2 (slit).
- Ginger: 1/2 inch (finely grated).
- Curry Leaves: A sprig.
- Turmeric Powder: 1/4 tsp (optional, use if you prefer a pale yellow color over white).
- Hing (Asafoetida): 1/4 tsp.
- Salt: To taste.
2. How to Cook - Step-by-Step Guidance
Step 1: Prep the Cabbage It is paramount that the shredded cabbage is dry. If it holds too much water, it will steam instead of fry, resulting in a soggy, unpleasant mush.
Step 2: The Crunch Tempering Heat the oil in a wide pan (kadai). Add mustard seeds. When they pop, add the urad dal and chana dal. Fry until these lentils turn a deep golden brown, providing a critical crunchy texture to the final dish.
Step 3: The Aromatics Add the hing, grated ginger, green chilies, and curry leaves. Sauté for a few seconds.
Step 4: Stir-Fry the Cabbage Turn the heat up to medium-high. Add the shredded cabbage, turmeric (if using), and salt. Toss continuously for exactly 4-6 minutes. Do not cover the pan with a lid. Covering causes the cabbage to sweat, losing its crispness. The intense heat will soften it just enough while retaining a firm bite.
Step 5: The Coconut Finish Once the cabbage has shrunk slightly but maintains its crunch, reduce the heat to low. Add the freshly grated coconut. Toss well for just 1 minute until the coconut is warmed through.
Step 6: Serve Turn off the heat. Serve immediately.
3. What are the Health Benefits?
- Digestive Cleanser: Cabbage is fundamentally sulfur-rich and acts as a massive internal broom, clearing out the intestinal tract beautifully.
- Stomach Ulcer Cure: Extremely rich in Vitamin U, a lesser-known compound that historically repairs the mucous lining of the stomach and heals peptic ulcers.
- Weight Loss: An entire bowl provides minimal calories while taking considerable digestive energy to process, boosting metabolism natively.
4. Who Can Avoid?
- Thyroid Issues: Raw or lightly cooked cruciferous vegetables contain goitrogens, which interfere with iodine uptake. If you have severe hypothyroidism, ensure the cabbage is fully cooked (sweated down longer) to neutralize this effect.
