Carrot Sambar

Detailed Carrot Sambar Recipe (Sattvik Style)

Carrot Sambar is slightly sweet, bright orange, and highly appealing to children or individuals recovering from illness. It is simple, gentle on the digestive tract, and wonderfully healthy.

1. Ingredients

  • Toor Dal: 1/2 cup (alternatively, half Toor Dal and half Moong Dal for an even lighter digest).
  • Carrots: 2 large carrots (peeled and sliced into thick rounds or batons).
  • Tamarind Extract: 1/2 lemon-sized ball (less tamarind is used here to let the carrot sweetness shine).
  • Tomato: 1 medium (chopped).
  • Sambar Powder: 1.5 tablespoons.
  • Ghee/Oil: 1.5 tablespoons.
  • Mustard Seeds: 1 tsp.
  • Fenugreek Seeds: 1/4 tsp.
  • Curry Leaves: A sprig.
  • Hing (Asafoetida): 1/4 tsp.
  • Turmeric Powder: 1/2 tsp.
  • Salt: To taste.
  • Fresh Coriander: Handful (chopped).

2. How to Cook - Step-by-Step Guidance

Step 1: Soften the Dal Pressure cook the washed dal with turmeric and 1.5 cups of water until it completely dissolves into a creamy texture. Whisk it vigorously and set it aside.

Step 2: Start the Broth In a deep saucepan, add the sliced carrots and chopped tomatoes along with a little water, salt, and half the turmeric powder. Boil the carrots for about 5 minutes until they become semi-soft.

Step 3: The Mild Tang Pour the extracted tamarind juice and the sambar powder into the simmering carrots. Let the mixture boil for another 5-7 minutes. Ensure the raw tamarind smell is gone and the carrots are fork-tender.

Step 4: Bring it Together Add the whisked, creamy dal to the bubbling carrot-tamarind broth. If the sambar is too dense, add a splash of warm water. Simmer the whole mixture on low heat for 3-4 minutes so the sweet carrots absorb the savory broth. Remove from the heat.

Step 5: Ghee Tempering Heat the ghee in a small pan. Toss in the mustard seeds. Once they crackle, reduce the heat. Add fenugreek seeds (letting them gain a golden-brown hue), the curry leaves, and a generous pinch of hing.

Step 6: Finishing Touch Pour the hot, fragrant tempering into the deep saucepan. Stir gently and garnish the orange-yellow stew with a heavy hand of freshly chopped coriander leaves.

3. What are the Health Benefits?

  • Exceptional Eye Care: Loaded with Vitamin A from the carrots, severely aiding in protecting retinal health and preventing night blindness.
  • Cooling and Healing: Naturally pacifies Pitta dosha (hyperacidity) because of the innate sweetness of the roots.
  • Skin Glow: High levels of antioxidants help flush out toxins from the liver and manifest as clear, glowing skin.

4. Who Can Avoid?

  • Diabetics: Although naturally sweet, eating huge portions of heavily cooked (softened) carrots can cause a very mild spike in glycemic index. Most individuals, however, can digest it safely.
