Ladies Finger Sambar

Detailed Ladies Finger Sambar (Vendakkai Sambar) Recipe (Sattvik Style)

Vendakkai Sambar is deeply loved for its earthy flavor. However, the okra must be correctly handled to prevent it from turning the entire sambar slimy. When properly roasted beforehand, it is absolutely exquisite.

1. Ingredients

  • Toor Dal: 1/2 cup (cooked mushy and whisked smooth).
  • Ladies Finger (Okra/Vendakkai): 250 grams (washed, completely dried, and cut into 1.5-inch pieces).
  • Tamarind Extract: 1 lemon-sized ball (soaked in warm water to extract thick juice).
  • Tomato: 1 chopped.
  • Sambar Powder: 1.5 to 2 tablespoons.
  • Turmeric Powder: 1/2 tsp.
  • Ghee or Sesame Oil: 2 tablespoons.
  • Mustard Seeds: 1 tsp.
  • Fenugreek Seeds: 1/4 tsp.
  • Dried Red Chilies: 1-2.
  • Hing (Asafoetida): 1/4 tsp.
  • Curry Leaves: A sprig.
  • Salt: To taste.
  • Coriander Leaves: Garnish.

2. How to Cook - Step-by-Step Guidance

Step 1: The Essential Okra Prep The okra must be perfectly dry before chopping. The slime is moisture-activated.

Step 2: Sauté the Okra (Crucial Step) Do not boil raw okra. Heat 1 tablespoon of sesame oil or ghee in a wide pan. Sauté the okra rounds on medium heat for 6-8 minutes until all the sliminess entirely vanishes, their color deepens slightly, and they shrink. This locks their shape and prevents a sticky sambar.

Step 3: The Tangy Boil In your main pot, pour the tamarind extract, 1 cup of water, salt, chopped tomato, turmeric, and Sambar powder. Bring to a rolling boil for 5-7 minutes to cook off the raw tamarind smell.

Step 4: Combine the Base Add the sautéed okra into the boiling tamarind base. Let it boil for just 2 minutes (it is already half-cooked from the sauté). Then, pour in the whisked, creamy Toor dal.

Step 5: Simmer Simmer the Sambar gently for 3 minutes until smooth. Remove from the heat.

Step 6: Tempering Heat the remaining ghee/oil. Add mustard seeds to pop, followed by fenugreek seeds (fry until reddish), red chilies, hing, and curry leaves. Pour over the sambar, garnish with coriander, and serve.

3. What are the Health Benefits?

  • Brain Health: Okra is historically known in Ayurveda to enhance intellect and soothe the nervous system.
  • Digestive Cleanser: The mucilage (slime) in okra, though minimized through cooking, acts a supreme lubricant for the intestinal tract, easing severe constipation and IBS.
  • Blood Sugar Regulation: The fibrous seeds and skin prevent rapid glucose absorption.

4. Who Can Avoid?

  • High Vata Conditions: Very dry Vata constitutions may find large quantities of okra slightly gas-producing unless properly spiced with hing to counteract it.
