Raw Mango Sambar
Detailed Raw Mango Sambar (Mangai Sambar) Recipe (Sattvik Style)
Raw Mango Sambar is a highly anticipated delicacy marking the onset of summer. By entirely replacing tamarind with the intense, citrus-like sourness of green mangoes, the sambar acquires a vibrant, fruity tang that is incredibly refreshing.
1. Ingredients
- Toor Dal: 1/2 cup (cooked completely soft and whisked smooth).
- Raw Green Mango: 1 medium-sized, firm, very sour mango (peeled and diced into large chunks).
- Tomato: 1 chopped.
- Sambar Powder: 1.5 to 2 tablespoons.
- Turmeric Powder: 1/2 tsp.
- Jaggery: 1 tsp (essential to balance the intense sourness).
- Ghee/Oil: 1.5 tablespoons.
- Mustard Seeds: 1 tsp.
- Fenugreek Seeds (Methi): 1/4 tsp.
- Dried Red Chilies: 1 to 2.
- Hing (Asafoetida): 1/4 tsp.
- Curry Leaves: A sprig.
- Salt: To taste.
- Fresh Coriander: A handful, chopped.
2. How to Cook - Step-by-Step Guidance
Step 1: Prep the Lentils Pressure cook the washed toor dal with turmeric until entirely dissolved. Whisk it vigorously to a velvety paste. Note: Do not soak any tamarind for this recipe.
Step 2: Boil the Mango In a deep heavy-bottomed pot, add the raw mango chunks, chopped tomato, turmeric powder, and salt. Add about 1.5 cups of water. Cover and boil. Raw mango cooks extremely fast (about 5-7 minutes). The flesh will soften and release its potent sour juices into the water, while the pieces should remain somewhat intact and not turn into total mush.
Step 3: The Spice Infusion Once the mango is soft, add the Sambar powder and the jaggery. Let the mixture boil vigorously for 3-4 minutes so the spices meld with the sour, fruity broth.
Step 4: Combine with Dal Pour the whisked toor dal into the boiling pot. If the sambar is too thick, add a little hot water. Stir well and let the sambar simmer for 4 minutes so the mango and lentil flavors marry perfectly. Turn off the heat.
Step 5: The Tadka (Tempering) Heat ghee in a tadka pan. Add mustard seeds. When they splutter, drop the heat and add fenugreek seeds, letting them turn reddish-brown. Add dried red chilies, hing, and curry leaves.
Step 6: Garnish Pour the sizzling tadka over the hot sambar and cover immediately. Garnish with freshly chopped coriander before serving.
3. What are the Health Benefits?
- Heat Stroke Prevention: Raw mango acts as a powerful coolant, traditionally preventing dehydration and heat exhaustion during peak summer.
- Vitamin C Engine: An absolute powerhouse for immune defense and fighting off seasonal infections.
- Liver Cleanser: Sour juices specifically stimulate the liver and promote the healthy secretion of bile.
4. Who Can Avoid?
- Sore Throat / Cough: Extreme sourness can aggressively irritate the throat lining if you are actively suffering from a sore throat or dry cough.
- Severe Acidity: While cooking dulls it slightly, massive amounts of raw mango can aggravate existing severe stomach ulcers.
