Capsicum Sambar
Detailed Capsicum (Bell Pepper) Sambar Recipe (Sattvik Style)
Capsicum Sambar has a magnificent, sweet-yet-peppery aroma. Bell peppers do not require long boiling, making this one of the fastest Sambars to prepare. They provide a wonderful crunch amidst the smooth lentils.
1. Ingredients
- Toor Dal: 1/2 cup (cooked completely soft and whisked smooth).
- Capsicum (Bell Peppers): 2 medium (core removed, cut into 1-inch squares).
- Tamarind Extract: 1 small lemon-sized ball (soaked in warm water to extract thick juice).
- Tomato: 1 chopped.
- Sambar Powder: 1.5 to 2 tablespoons.
- Turmeric Powder: 1/2 tsp.
- Ghee/Oil: 1 tablespoon.
- Mustard Seeds: 1 tsp.
- Fenugreek Seeds: 1/4 tsp.
- Dried Red Chilies: 1 to 2.
- Hing (Asafoetida): 1/4 tsp.
- Curry Leaves: A sprig.
- Salt: To taste.
- Fresh Coriander: Handle, chopped.
2. How to Cook - Step-by-Step Guidance
Step 1: Mash the Dal Ensure the Toor dal is pressure-cooked perfectly with turmeric until completely soft. Whisk it to a velvety paste.
Step 2: Sauté the Capsicum (Critical Step) Unlike other vegetables, capsicum loses its skin texture if boiled directly in tamarind. Heat a drop of oil in your main pot. Sauté the capsicum squares and chopped tomato for 3-4 minutes on medium heat. The skins should slightly blister, locking in that sweet, roasted bell-pepper flavor.
Step 3: The Tangy Broth Add the turmeric powder, Sambar powder, and salt. Pour in the tamarind extract along with 1 cup of water. Scrape the bottom of the pot. Boil the mixture for 5-6 minutes. The capsicum will soften but retain a slight crunch, and the raw tamarind will neutralize.
Step 4: Combine with Dal Add the mashed, creamy toor dal to the boiling broth. Dilute with hot water if too thick. Let the Sambar simmer gently for 3 minutes to marry the flavors. Turn off the heat.
Step 5: The Tempering Heat ghee or oil in a tadka pan. Add mustard seeds and let them splutter. Add fenugreek seeds (fry until reddened), broken red chilies, hing, and curry leaves.
Step 6: Garnish Pour the violent sizzle over the sambar pot and cover it immediately. Stir in freshly ground coriander leaves and serve.
3. What are the Health Benefits?
- Vitamin C Dense: Capsicum provides double the Vitamin C of an orange, radically boosting immunity and collagen production.
- Low Glycemic: Keeps blood sugar utterly stable while providing robust flavor.
- Metabolic Booster: The mild capsaicin compounds gently stoke the digestive fire (Agni) without causing heartburn or acidity.
4. Who Can Avoid?
- Nightshade Sensitivity: Capsicum is a nightshade. Individuals on strict autoimmune diets or those experiencing severe inflammatory joint pain (Vata/Pitta aggravated arthritis) should avoid it.
