Beetroot Sambar
Detailed Beetroot Sambar Recipe (Sattvik Style)
Beetroot Sambar is visually stunning, turning the traditional yellow-orange lentil broth into a deep crimson. The earthiness of the root vegetable is perfectly balanced by the sharpness of tamarind and Sambar spices.
1. Ingredients
- Toor Dal: 1/2 cup (cooked until perfectly mushy).
- Beetroot: 2 medium (peeled and diced into medium cubes).
- Tamarind Extract: 1 medium lemon-sized ball (soaked in warm water to extract thick juice).
- Tomato: 1 chopped.
- Sambar Powder: 2 tablespoons.
- Turmeric Powder: 1/2 tsp.
- Ghee or Coconut Oil: 1.5 tablespoons.
- Mustard Seeds: 1 tsp.
- Fenugreek Seeds: 1/4 tsp.
- Dried Red Chilies: 1 to 2.
- Hing (Asafoetida): 1/4 tsp.
- Curry Leaves: A sprig.
- Salt: To taste.
- Fresh Coriander: A handful.
2. How to Cook - Step-by-Step Guidance
Step 1: Prepare the Dal Pressure cook the washed Toor dal with turmeric until completely soft. Whisk rigorously to create a smooth, creamy texture.
Step 2: Boil the Beetroot In a deep pot, add the diced beetroot, chopped tomato, salt, turmeric powder, and 1.5 cups of water. Beetroot takes slightly longer to cook than gourds. Boil for 10-12 minutes until the cubes are fork-tender.
Step 3: The Tangy Infusion Once the beets are tender, pour in the tamarind extract and the Sambar Powder. Let the dark red broth boil vigorously for 5-7 minutes. The raw tamarind flavor must fully cook out. The acid from the tamarind will lock the deep red color in place.
Step 4: Combine the Base Fold the whisked, creamy Toor dal into the boiling beetroot broth. Simmer the entire mixture on low heat for 4-5 minutes so the lentils absorb the earthy, sweet, and tangy flavors. Turn off the heat.
Step 5: Coconut Oil Tadka Heat the ghee (or ideally, coconut oil, which pairs beautifully with beetroot). Add mustard seeds. When they pop, add fenugreek seeds (let them turn brown), broken red chilies, hing, and curry leaves.
Step 6: Flourish Pour the aromatic tadka into the crimson Sambar. Garnish with freshly chopped coriander.
3. What are the Health Benefits?
- Stamina & Blood Flow: High dietary nitrates in cooked beetroot dilate blood vessels, heavily improving blood flow, stamina, and lowering blood pressure.
- Liver Cleanser: Contains Betaine, which encourages the liver to flush out toxins.
- Anemia Relief: Excellent for boosting hemoglobin counts due to high iron and folate density.
4. Who Can Avoid?
- Kidney Stones: Beetroots are incredibly high in oxalates. Those with a history or genetic predisposition to calcium-oxalate kidney stones must eat beetroot sambar in strict moderation.
