Snake Gourd Sambar

Detailed Snake Gourd (Pudalangai) Sambar Recipe (Sattvik Style)

Snake Gourd Sambar possesses a delicate, slightly sweet flavor. It provides a crisp-tender bite that holds up beautifully in the thick lentil gravy without dissolving into mush like some other gourds.

1. Ingredients

  • Toor Dal: 1/2 cup (cooked entirely soft and whisked smooth).
  • Snake Gourd: 1 large or 2 medium (scraped to remove the outer waxy layer, split, seeds removed, and cut into half-moons).
  • Tamarind Extract: 1 small lemon-sized ball (soaked to extract juice).
  • Tomato: 1 chopped.
  • Sambar Powder: 1.5 to 2 tablespoons.
  • Turmeric Powder: 1/2 tsp.
  • Curry Leaves: A sprig.
  • Ghee/Oil: 1 tablespoon.
  • Mustard Seeds: 1 tsp.
  • Fenugreek Seeds: 1/4 tsp.
  • Urad Dal: 1/2 tsp (adds a nice crunch in the tempering).
  • Hing (Asafoetida): 1/4 tsp.
  • Salt: To taste.

2. How to Cook - Step-by-Step Guidance

Step 1: Pulse the Dal Pressure cook the thoroughly washed Toor dal with turmeric until mushy. Using an egg beater or whisk, mash it until perfectly smooth.

Step 2: Sauté the Gourd Although you can boil it directly, snake gourd benefits from a quick sauté. Heat a drop of oil in the main pot. Sauté the snake gourd semicircles for 2 minutes to lock the flavor and crunch.

Step 3: The Broth Add the chopped tomato, turmeric powder, and salt to the pot. Close the lid and let the vegetables sweat for 3 minutes. Then, pour in the tamarind extract, Sambar powder, and a cup of water.

Step 4: The Boiling Phase Boil the mixture hard for 6-8 minutes. The snake gourd will turn pale green and fully tender, and the tamarind will lose its raw tang.

Step 5: Integrate Lentils Pour the creamy, mashed dal into the boiling broth. Dilute with hot water if necessary. Simmer the combined mixture for 3 minutes before turning off the heat.

Step 6: Tempering Heat the ghee. Add mustard seeds. When they pop, add urad dal (fry to golden brown), fenugreek seeds (reddish-brown), hing, and curry leaves. Pour the tadka over the sambar and cover. Add coriander leaves if desired.

3. What are the Health Benefits?

  • Heart Friendly: Snake gourd expands blood vessels and acts as a natural relaxant, significantly aiding in regulating blood pressure.
  • Bowel Regulation: It contains dense amounts of dietary fiber and moisture, making it an excellent natural laxative to cure chronic constipation.
  • Expectorant Properties: Effectively loosens phlegm and mucous in the respiratory tract.

4. Who Can Avoid?

  • Digestive Weakness (Vata): Consuming large, under-cooked slices of snake gourd can cause mild bloating. Ensure the slices are thoroughly cooked within the Sambar.
