Bottle Gourd Sambar
Detailed Bottle Gourd (Sorakkai) Sambar Recipe (Sattvik Style)
Bottle Gourd Sambar is exceptionally light, hydrating, and soothing. The gourd absorbs the tangy lentil broth like a sponge, becoming melt-in-the-mouth soft while providing immense cooling relief to the body.
1. Ingredients
- Toor Dal: 1/2 cup (cooked until perfectly mushy).
- Bottle Gourd (Sorakkai/Lauki): 2 cups, peeled, seeds removed if hard, and chopped into medium cubes.
- Tamarind Extract: 1/2 lemon-sized ball (soaked in warm water; use slightly less tamarind for watery gourds).
- Tomato: 1 medium (chopped).
- Sambar Powder: 1.5 to 2 tablespoons.
- Turmeric Powder: 1/2 tsp.
- Jaggery: A tiny piece (optional, to balance).
- Ghee/Oil: 1 tablespoon.
- Mustard Seeds: 1 tsp.
- Fenugreek Seeds (Methi): 1/4 tsp.
- Hing (Asafoetida): 1/4 tsp.
- Curry Leaves: A sprig.
- Salt: To taste.
- Coriander Leaves: Handful, for garnish.
2. How to Cook - Step-by-Step Guidance
Step 1: Prep the Lentils Pressure cook the toor dal with a pinch of turmeric and water until it breaks down completely. Whisk to a smooth consistency and set it aside.
Step 2: Cook the Bottle Gourd In a heavy pot, add the chopped bottle gourd, chopped tomato, turmeric powder, and salt. Add just enough water to cover them. As the gourd drops a lot of its own water, do not add too much. Boil until the bottle gourd is soft and translucent (about 6-8 minutes).
Step 3: The Tangy Boil Once the gourd is tender, add the tamarind extract and sambar powder. Boil vigorously for 5 minutes. The raw tamarind smell will vanish.
Step 4: Bring the Sambar Together Fold the whisked toor dal and the tiny piece of jaggery into the boiling pot. Let the sambar simmer softly for 4 minutes to marry the flavors. Remove from the heat.
Step 5: The Essential Tadka Heat ghee or oil in a pan. Add the mustard seeds. Once they pop, drop the heat and add fenugreek seeds (methi) until they turn reddish-brown. Add hing and curry leaves.
Step 6: Flourishing Finish Pour the sputtering tadka over the hot sambar. Cover instantly. Garnish with fresh coriander before offering.
3. What are the Health Benefits?
- Pitta Pacifying: Bottle gourd is 92% water and intensely cooling, making it a supreme Ayurvedic medicine for pacifying Pitta dosha (acid reflux, ulcers, hyperacidity).
- Urinary Health: A natural diuretic, serving it in a fluid Sambar helps flush out urinary tract infections and kidney stoppers.
- Low Caloric Satiety: Extremely low in calories but very filling due to the water and fiber weight.
4. Who Can Avoid?
- Taste Test Warning: Always taste a tiny piece of raw bottle gourd before cooking. If it tastes excessively bitter, discard it immediately. Bitter bottle gourd contains potent toxins that can cause severe gastrointestinal distress.
- High Kapha Conditions: Because of its severe cooling properties, avoid eating it at night during heavy winter colds.
