Ash Gourd Sambar

Detailed Ash Gourd Sambar (Poosanikai Sambar) Recipe (Sattvik Style)

Ash Gourd (Winter Melon) is considered one of the most spiritually and physically potent vegetables in Ayurveda. Cultivated for its immense Prana (life-force), it cooks down into a transparent, watery, cooling sambar.

1. Ingredients

  • Toor Dal: 1/2 cup (cooked until soft and whisked).
  • Ash Gourd (White Pumpkin): 2 cups (peeled, seeds removed, chopped into large cubes).
  • Tamarind Extract: 1/2 lemon-sized ball (use slightly less to retain the gourd's delicate flavor).
  • Tomato: 1 small (chopped).
  • Sambar Powder: 1.5 to 2 tablespoons.
  • Ghee/Oil: 1 tablespoon.
  • Mustard Seeds: 1 tsp.
  • Fenugreek Seeds: 1/4 tsp.
  • Hing (Asafoetida): 1/4 tsp.
  • Turmeric Powder: 1/2 tsp.
  • Curry Leaves: A sprig.
  • Salt: To taste.
  • Coriander Leaves: Handful (chopped).

2. How to Cook - Step-by-Step Guidance

Step 1: Prepare the Dal Pressure cook the thoroughly washed Toor dal with turmeric until completely mushy. Whisk smooth and set aside.

Step 2: Boil the Ash Gourd In a pot, boil the ash gourd cubes and chopped tomato in 1.5 cups of water with a pinch of turmeric and salt. Ash Gourd has a high water content and cooks very quickly (5-7 minutes). Do not over-boil, or it will disintegrate.

Step 3: The Tangy Infusion Once the ash gourd turns slightly translucent, pour in the tamarind extract and the sambar powder. Boil vigorously for 5 minutes to cook out the tamarind's raw edge.

Step 4: Combine the Base Pour the creamy, mashed toor dal into the boiling broth. Let the entire mixture simmer gently for 3-4 minutes. Turn off the heat.

Step 5: Tempering (Tadka) Heat the ghee or oil. Crackle the mustard seeds. Once they pop, drop the heat and add fenugreek seeds (fry until reddish), followed by the hing and fresh curry leaves.

Step 6: Finishing Touch Pour the fragrant tadka over the hot sambar. Garnish generously with fresh coriander leaves before serving.

3. What are the Health Benefits?

  • High Prana Vegetable: Ash gourd is uniquely revered for boosting memory, intellect, and physical strength without adding heaviness.
  • Alkaline Nature: Highly alkaline, making it the perfect remedy to cool stomach acid and heal peptic or duodenal ulcers.
  • Natural Detoxifier: Flushes the urinary tract and reduces water retention due to its mild diuretic properties.

4. Who Can Avoid?

  • Severe Colds/Asthma (Vata-Kapha): Ash Gourd is intensely cooling and increases Kapha. It should be avoided by those suffering from asthma, bronchitis, or during severe winter colds, unless cooked with significant black pepper.
