Small Onion-free Sambar (temple style)

Detailed Temple Style Onion-Free Sambar (Arachuvitta Sambar)

The defining hallmark of authentic South Indian temple Sambar is its complete lack of onions and garlic, and the use of freshly roasted and ground spices (Arachuvitta) rather than pre-made sambar powder. This results in unparalleled freshness and aroma.

1. Ingredients

  • Toor Dal: 1/2 cup (cooked mushy and whisked).
  • Vegetables: 1.5 cups diced (usually ash gourd, yellow pumpkin, or drumstick).
  • Tamarind Extract: 1 lemon-sized ball (soaked in warm water to extract thick juice).
  • Tomato: 1 medium (optional, chopped).
  • Turmeric Powder: 1/2 tsp.
  • Salt: To taste.
  • For the Fresh Spice Paste (Arachuvitta Masala):
    • 1 tbsp Coriander seeds
    • 1 tbsp Chana Dal
    • 1/2 tsp Fenugreek seeds (Methi)
    • 4-5 Dried Kashmiri Red Chilies (for color, low heat)
    • 1/4 cup Freshly grated coconut
    • 1/2 tsp coconut oil for roasting
  • For Tempering:
    • 1 tbsp Ghee / Sesame Oil
    • 1 tsp Mustard seeds
    • 1/4 tsp Hing (Asafoetida)
    • 1 sprig Curry leaves

2. How to Cook - Step-by-Step Guidance

Step 1: The Fresh Spice Paste Heat a drop of coconut oil in a pan. Roast the coriander seeds, chana dal, fenugreek seeds, and dried red chilies on low heat until golden and aromatic. Add the fresh grated coconut and roast lightly for 1 minute (do not brown the coconut). Allow to cool, then add a little water and grind to a smooth paste.

Step 2: Cook the Vegetables In a heavy pot, boil the chosen vegetables (e.g., ash gourd) in the tamarind extract and water, along with the chopped tomato, turmeric, and salt. Boil until the vegetables are cooked and the raw tamarind smell disappears (about 10 mins).

Step 3: Introduce the Fresh Masala Stir the freshly ground coconut-spice paste into the boiling tamarind base. Lower the heat to avoid curdling the coconut and let it simmer for 4 minutes.

Step 4: Combine with Dal Pour the whisked toor dal into the pot. Simmer the unified sambar gently for 3-4 minutes until it reaches a fragrant, creamy consistency. Turn off the heat.

Step 5: Tempering Heat ghee/oil in a pan. Add mustard seeds to pop, followed by hing and curry leaves. Let it sizzle and pour it directly over the sambar. Garnish with fresh coriander.

3. What are the Health Benefits?

  • Ojas Enhancing: Freshly grated coconut combined with ghee and lentils produces Ojas, the body's vital essence responsible for immunity and glowing health.
  • Tamasic Free: Because it strictly avoids onions/garlic, it keeps consciousness clear, meditative, and sattvic.
  • Easily Assimilated: Freshly ground spices retain their active essential oils, which optimize digestion significantly better than stale, stored powders.

4. Who Can Avoid?

  • Weight Loss Regimes: The addition of fresh coconut makes this sambar rich and dense in healthy fats. Those strictly monitoring calories might prefer regular powder-based sambar.
