Mixed Vegetable Sambar

Detailed Mixed Vegetable Sambar Recipe (Sattvik Style)

Mixed Vegetable Sambar is the quintessential everyday Sambar in traditional households. By utilizing an array of seasonal vegetables, it provides comprehensive nutrition and diverse textures in every single spoonful.

1. Ingredients

  • Toor Dal: 1/2 cup (cooked until mushy and whisked smooth).
  • Mixed Vegetables: 2 cups diced (e.g., carrots, french beans, ash gourd, raw banana, flat beans, potatoes).
  • Tamarind Extract: 1 lemon-sized ball (soaked in warm water to extract thick juice).
  • Tomato: 1 medium (chopped).
  • Sambar Powder: 2 to 2.5 tablespoons.
  • Turmeric Powder: 1/2 tsp.
  • Ghee/Oil: 1.5 tablespoons.
  • Mustard Seeds: 1 tsp.
  • Fenugreek Seeds (Methi): 1/4 tsp.
  • Dried Red Chilies: 1-2.
  • Curry Leaves: A sprig.
  • Hing (Asafoetida): 1/4 tsp.
  • Salt: To taste.
  • Fresh Coriander: A handful, chopped.

2. How to Cook - Step-by-Step Guidance

Step 1: Prep the Lentils Pressure cook the washed toor dal with a pinch of turmeric until it is completely soft and dissolved. Whisk it well to remove any lumps.

Step 2: Boil the Vegetables In a deep heavy-bottomed pot, add the diced mixed vegetables, chopped tomato, salt, turmeric powder, and about 1.5 cups of water. Cover and boil until the vegetables are 70% cooked (just tender but not mushy).

Step 3: Add Tamarind and Spices Pour the tamarind extract into the pot with the vegetables. Add the sambar powder. Let the mixture boil vigorously for 8-10 minutes. The raw smell of the tamarind and spices must vanish, and the vegetables should fully absorb the spicy-tangy broth.

Step 4: Combine with Dal Add the whisked toor dal to the boiling pot. If the sambar is too thick, add a little hot water. Stir well and let the sambar simmer for 4-5 minutes so the lentil creaminess binds the broth together. Turn off the heat.

Step 5: The Tadka (Tempering) Heat ghee in a small pan. Add mustard seeds. When they splutter, drop the heat and add fenugreek seeds, letting them turn reddish-brown. Add dried red chilies, hing, and curry leaves.

Step 6: Garnish Pour the sizzling ghee mixture over the hot sambar and cover immediately. Garnish with freshly chopped coriander before serving alongside rice, idli, or dosa.

3. What are the Health Benefits?

  • Micro-nutrient Powerhouse: Combines vitamins, minerals, and fiber from up to five different vegetables in a single serving.
  • Synergistic Digestion: The blend of high-fiber vegetables with protein-rich lentils ensures slow, sustained absorption of carbohydrates, preventing blood sugar spikes.
  • Immunity Boost: Tamarind, turmeric, and hing provide natural antibacterial and immune-boosting properties.

4. Who Can Avoid?

  • Weak Agni (Poor Digestion): Extremely weak digestive systems may struggle to process so many different types of vegetables simultaneously. In such cases, a single-vegetable Sambar or plain dal is preferred.
