Moong Dal Khichdi
Detailed Moong Dal Khichdi Recipe (Sattvik Style)
Khichdi is the undisputed king of Ayurvedic healing foods. A simple porridge of rice and yellow moong dal, it is deeply nourishing, completely tridoshic (balances all body types), and universally comforting.
1. Ingredients
- Rice: 1/2 cup short-grain rice (Sona Masoori or similar).
- Moong Dal: 1/2 cup split yellow moong dal.
- Ghee: 3 tablespoons of top-quality A2 cow ghee.
- Cumin Seeds (Jeera): 1.5 teaspoons.
- Ginger: 1/2 inch (finely grated).
- Turmeric Powder: 1/2 tsp.
- Hing (Asafoetida): A generous pinch.
- Black Peppercorns: 1/2 tsp (coarsely crushed).
- Salt: 1 tsp (or to taste).
- Water: 4 to 5 cups (for a soft, porridge-like consistency).
2. How to Cook - Step-by-Step Guidance
Step 1: Wash and Prepare Combine the rice and yellow moong dal. Wash them thoroughly 3-4 times. You can soak them together for 15-20 minutes, which makes the khichdi even softer and faster to digest.
Step 2: Pressure Cooking the Base In a pressure cooker, add the washed rice and dal, turmeric powder, salt, and 4 to 5 cups of water. Cook on medium heat for 4-5 whistles. The exact amount of water dictates how soupy your khichdi will be. Once the pressure releases, open and whisk the mixture slightly so it becomes creamy.
Step 3: The Healing Tempering (Tadka) In a small pan, heat the ghee. Add the cumin seeds and let them sizzle until slightly browned.
Step 4: Spicing the Ghee Add the crushed black pepper, grated ginger, and hing. Sauté for just 15-20 seconds until highly fragrant. Do not burn the ginger.
Step 5: Combine Pour this golden, aromatic ghee entire tempering directly over the hot, creamy rice and dal. Mix vigorously.
Step 6: Serve Khichdi is best eaten immediately while it is hot, soft, and soothing.
