Spinach Rice
Detailed Spinach Rice (Palak Pulao) Recipe (Sattvik Style)
Spinach Rice is a wonderfully nutritious and vibrantly green dish. By pureeing the spinach, it coats every grain of rice, ensuring maximum absorption of the greens without the bitterness.
1. Ingredients
- Rice: 1.5 cups of Basmati rice (soaked for 20 mins and drained).
- Spinach (Palak): 1 large bunch (leaves only, washed thoroughly).
- Ghee/Oil: 3 tablespoons.
- Whole Spices: 1 tsp cumin seeds, 1 inch cinnamon, 2 cloves, 2 cardamom pods.
- Green Chilies: 2.
- Ginger: 1/2 inch piece.
- Cashews/Peanuts: 2 tablespoons.
- Garam Masala (Sattvik): 1/2 tsp.
- Water: 2.5 cups (accounting for the moisture in the spinach puree).
- Salt: To taste.
2. How to Cook - Step-by-Step Guidance
Step 1: Blanch the Spinach Boil a pot of water. Drop the washed spinach leaves in for exactly 1 minute until they wilt but remain bright green. Transfer immediately to a bowl of ice water to stop the cooking and preserve the color.
Step 2: Puree Blend the blanched spinach, green chilies, and ginger into a smooth, bright green puree.
Step 3: Bloom the Spices Heat ghee in a heavy pot. If using cashews, fry them until golden and set aside. In the same ghee, add the whole spices (cumin, cinnamon, cloves, cardamom).
Step 4: Cook the Puree Add the spinach puree to the pot and sauté for 2 minutes to cook off the raw ginger flavor. Add the garam masala and salt.
Step 5: Add Rice and Liquid Add the soaked, drained rice and gently toss. Pour in the 2.5 cups of hot water. Give it a gentle mix and bring to a boil.
Step 6: Cover and Steam Lower the heat to its lowest setting, cover tightly, and cook for 10-12 minutes until all the liquid is absorbed. Turn off the heat and rest for 5 minutes. Fluff gently and garnish with the fried cashews before offering.
