Peas Pulao
Detailed Peas Pulao (Matar Pulao) Recipe (Sattvik Style)
Peas Pulao is a classic, fragrant rice dish highlighting the natural sweetness of fresh green peas. Without the heavy interference of onions or garlic, this dish is the epitome of simple elegance.
1. Ingredients
- Rice: 1.5 cups of Basmati rice (soaked for 20 mins and drained).
- Green Peas (Matar): 1 cup (preferably fresh, or thawed frozen peas).
- Ghee: 3 tablespoons.
- Whole Spices: 1 tsp cumin seeds (jeera), 1 bay leaf, 2 green cardamoms, 1-inch cinnamon.
- Ginger: 1/2 inch (crushed into a paste).
- Green Chilies: 1-2 (slit).
- Water: 3-3.25 cups.
- Salt: 1.5 tsp (or to taste).
- Garnish: Fresh mint or coriander leaves.
2. How to Cook - Step-by-Step Guidance
Step 1: Bloom the Spices Heat the ghee in a heavy pot or pressure cooker. Add the bay leaf, cinnamon, and cardamoms. Give them a few seconds to release their aroma, then add the cumin seeds. Let the cumin seeds turn slightly brown.
Step 2: Sauté the Peas Add the ginger paste, green chilies, and the green peas. Sauté everything for 1-2 minutes. The peas will become bright green and glisten in the ghee.
Step 3: Roast the Rice Add the drained Basmati rice. Gently toss the rice with the peas and spiced ghee for about 2 minutes. This step ensures the rice grains remain fluffy and separate after cooking.
Step 4: Simmer Pour in the boiling water and add salt. Give it a gentle stir. Bring the mixture to a rolling boil.
Step 5: The 'Dum' (Steaming) Reduce the heat to the absolute lowest setting. Cover tightly with a lid and let it cook undisturbed for 10-12 minutes until the water is completely absorbed.
Step 6: Fluff and Rest Turn off the heat and let the pot sit, covered, for another 5 minutes. Carefully open and fluff the rice with a fork. The peas will have risen to the top. Mix gently and garnish.
3. What are the Health Benefits?
- Plant-Based Protein: Green peas are an excellent source of vegetarian protein and dietary fiber, keeping you full for a long time.
- Heart Friendly: The low-fat profile of the peas combined with the moderate use of pure ghee makes this a satiating but heart-healthy staple.
- Easy Digestion: The whole cumin and ginger perfectly balance the heaviness of the peas, making it excellent for digestion.
4. Who Can Avoid?
- Vata Aggravation: Peas can sometimes cause bloating or gas (Vata aggravation) in sensitive individuals. Ensure they are thoroughly cooked and never skip the cumin and ginger to prevent this.
