Detailed Carrot Rice Recipe (Sattvik Style)
Carrot Rice is a mild, sweet, and comforting dish. Grated carrots cook quickly and infuse the rice with a beautiful orange hue, making it an attractive and deeply nourishing option, particularly beloved by children.
1. Ingredients
- Rice: 1.5 cups of Sona Masoori or Basmati rice (cooked and cooled).
- Carrots: 2 large carrots (peeled and freshly grated).
- Ghee/Oil: 2 tablespoons of ghee or mild cooking oil.
- Mustard Seeds: 1 tsp.
- Chana Dal: 1 tbsp.
- Urad Dal: 1 tsp.
- Cashews: 2 tbsp (split).
- Green Chilies: 2 (slit).
- Ginger: 1/2 inch (finely grated).
- Curry Leaves: A sprig.
- Turmeric Powder: A tiny pinch for color.
- Salt: To taste.
- Fresh Coriander: A handful, chopped.
2. How to Cook - Step-by-Step Guidance
Step 1: Tempering Heat the ghee in a wide-bottomed pan on medium heat. Add the mustard seeds. Once they splutter, add the chana dal, urad dal, and cashews. Roast until the cashews are golden brown.
Step 2: Add Aromatics Stir in the grated ginger, green chilies, and curry leaves. Sauté for about 30 seconds until the ginger is fragrant.
Step 3: Sauté the Carrots Add the grated carrots to the pan along with a pinch of turmeric and salt. Sauté gently on medium-low heat for 3-4 minutes. The carrots should soften slightly but retain a tiny bit of crispness. Do not overcook them into a mush.
Step 4: Combine the Rice Turn the heat to the lowest setting. Add the cooked and cooled rice. Gently fold the rice into the carrot mixture until the grains are evenly coated and take on the light orange coloring.
Step 5: Garnish Turn off the heat. Sprinkle with freshly chopped coriander leaves. Cover and let it sit for 5 minutes before serving or offering as prasadam.
3. What are the Health Benefits?
- Eye Health: Carrots are exceptionally high in beta-carotene (Vitamin A), which is vital for maintaining good vision and eye health.
- Pitta Pacifying: The natural sweetness of carrots has a cooling, pleasant effect on the stomach, pacifying excess Pitta (acidity).
- Skin Vibrancy: Antioxidants in cooked carrots help maintain glowing, healthy skin.
4. Who Can Avoid?
- Blood Sugar Spikes (Diabetes): Cooked carrots have a higher glycemic index than raw ones. Those managing strict diabetic diets should eat this in moderation and ideally pair it with a protein-heavy side dish like lentil dal.
