Beetroot Rice

Detailed Beetroot Rice Recipe (Sattvik Style)

Beetroot Rice is a visually spectacular, deep-magenta dish. Its natural earthiness is balanced by tempering spices and coconut, creating a highly nutritious and vibrant prasadam offering.

1. Ingredients

  • Rice: 1.5 cups cooked and cooled rice.
  • Beetroot: 1 large or 2 medium beetroots (peeled and grated).
  • Oil/Ghee: 2 tablespoons (coconut oil works wonderfully here).
  • Mustard Seeds: 1 tsp.
  • Urad Dal: 1 tsp.
  • Chana Dal: 1 tsp.
  • Green Chilies or Dry Red Chilies: 2 (cut).
  • Ginger: 1/2 inch (finely grated).
  • Curry Leaves: A sprig.
  • Fresh Coconut: 3 tablespoons (grated).
  • Coriander Powder: 1/2 tsp.
  • Salt: To taste.
  • Lemon Juice: 1 teaspoon (vital for balancing the earthiness).

2. How to Cook - Step-by-Step Guidance

Step 1: Prep the Beetroot Wash, peel, and grate the beetroot finely. Grating ensures it cooks quickly and evenly coats the rice.

Step 2: Tempering Heat the oil or ghee in a wide pan. Add mustard seeds and allow them to crackle. Add the urad dal and chana dal, frying until they turn a light golden color.

Step 3: Aromatics Add the grated ginger, chilies, and curry leaves. Sauté for a few seconds.

Step 4: Cook the Beetroot Add the grated beetroot and a pinch of salt to the pan. Sauté for about 5-7 minutes on medium heat. The beetroot should soften and lose its raw, starchy smell, but it shouldn't turn into a watery paste. Add the coriander powder and mix well.

Step 5: Fold the Rice and Coconut Lower the heat. Add the fresh grated coconut and stir for a minute. Then, add the cooled rice and remaining salt. Gently fold everything together until all the white rice grains absorb the stunning pink color of the beetroot.

Step 6: Final Balance Turn off the heat. Drizzle the lemon juice over the top. The acid from the lemon perfectly balances the natural sugary earthiness of the root vegetable. Serve warm.

3. What are the Health Benefits?

  • Blood Purifier: Beetroot is revered in both modern science and Ayurveda for purifying the blood and naturally lowering blood pressure.
  • High Iron & Folate: Excellent for fighting anemia and boosting stamina.
  • Liver Cleanser: Contains betaine, a compound that supports the liver in processing and flushing toxins from the body.

4. Who Can Avoid?

  • Kidney Stones: Beetroots are high in oxalates. Those with a history of calcium-oxalate kidney stones should consume beetroot in strict moderation.
