Paneer Pulao

Detailed Paneer Pulao Recipe (Sattvik Style)

Paneer Pulao combines the luxury of Indian cottage cheese with fragrant rice. By eliminating onions and garlic, the delicate sweetness of the paneer and the subtle whole spices are allowed to shine brilliantly.

1. Ingredients

  • Rice: 1.5 cups of long-grain Basmati rice (soaked for 20 mins and drained).
  • Paneer: 200 grams, cut into small, bite-sized cubes.
  • Green Peas: 1/2 cup (fresh or frozen).
  • Ghee: 3 tablespoons.
  • Whole Spices: 1 tsp cumin seeds, 2 green cardamoms, 1 black cardamom, 1 bay leaf, 1-inch cinnamon stick.
  • Ginger: 1 tbsp (grated).
  • Green Chilies: 1-2 (slit).
  • Turmeric Powder: 1/4 tsp.
  • Garam Masala (Sattvik): 1/2 tsp.
  • Salt: To taste.
  • Water: 3-3.5 cups.
  • Herbs: Fresh coriander leaves.

2. How to Cook - Step-by-Step Guidance

Step 1: Shallow Fry the Paneer Heat 1 tablespoon of ghee in a pan. Add the paneer cubes and shallow fry them until they have a pale golden crust on all sides. Remove from the pan and immediately drop the fried paneer cubes into a bowl of warm water. This secret step keeps them unbelievably soft and prevents rubberiness.

Step 2: Bloom Spices In a heavy pot, heat the remaining 2 tablespoons of ghee. Add the cumin seeds, green and black cardamoms, bay leaf, and cinnamon. Sauté until fragrant.

Step 3: Aromatics and Peas Add the grated ginger and green chilies. Sauté for a few seconds. Toss in the green peas, turmeric powder, and garam masala. Give it a quick stir.

Step 4: Roast the Rice Add the drained rice to the pot. Gently mix with the spiced ghee and peas, roasting for 2 minutes to coat the grains safely.

Step 5: Simmer with Paneer Squeeze the paneer lightly to drain the water and add the cubes to the rice pot. Add the boiling water and salt. Mix gently.

Step 6: Cook to Perfection Cover tightly and cook on the lowest heat for about 12 minutes or until the water is completely absorbed. Turn off the heat, let it rest for 5 minutes, then fluff with a fork. Garnish with fresh coriander.

3. What are the Health Benefits?

  • High Protein: Paneer is an excellent source of high-quality vegetarian protein, essential for muscle repair and growth.
  • Calcium Boost: Provides significant calcium necessary for strong bones and teeth.
  • Sustained Satiety: The combination of complex carbs (rice) and casein protein (paneer) keeps the body full and blood sugar stable for hours.

4. Who Can Avoid?

  • Lactose Intolerance/Dairy Sensitivity: Individuals who have difficulty digesting dairy proteins (casein/whey) should avoid this or substitute with firm tofu.
  • Slow Metabolism: Paneer is heavy; individuals with poor digestive fire should eat it during lunchtime when digestion is strongest, rather than at night.
