Cashew Rice
Detailed Cashew Rice (Kaju Pulao) Recipe (Sattvik Style)
Cashew Rice is a rich, festive delicacy. Because the protein-dense cashew nut is the focal point, this dish is usually prepared for grand deity offerings, spiritual festivals, or as a decadent Sunday prasadam.
1. Ingredients
- Rice: 1.5 cups of Basmati rice (soaked for 20 minutes and drained).
- Cashew Nuts (Kaju): 1/2 cup (whole or split, premium quality).
- Ghee: 4 tablespoons (do not substitute with oil for authentic flavor).
- Milk or Coconut Milk: 1/2 cup (for added richness and soft texture).
- Water: 2.5 cups.
- Whole Spices: 1/2 tsp Shahi Jeera (or regular cumin), 1 bay leaf, 3 green cardamoms, 1 small piece mace (javitri).
- Ginger: 1/2 inch (finely ground).
- Green Chilies: 2 (slit).
- Salt: To taste.
2. How to Cook - Step-by-Step Guidance
Step 1: Golden Cashews Heat 2 tablespoons of ghee in a pan or pot on low heat. Add the cashew nuts. Slowly roast them until they turn an even, beautiful golden-brown. Remove the cashews with a slotted spoon and set them aside.
Step 2: Aromatic Tempering In the same ghee (add 1-2 more tablespoons if needed), add the Shahi Jeera, bay leaf, cardamom, and mace. Let them sizzle and release their fragrance for 20 seconds.
Step 3: Spice Base Add the grated ginger and green chilies. Sauté lightly.
Step 4: Toast the Rice Add the soaked and drained Basmati rice. Gently fold it into the ghee until every grain is glistening. Sauté for 2 minutes on low heat to lock the starch inside the grain.
Step 5: Simmer in Richness Add the 2.5 cups of boiling water, 1/2 cup of milk (or coconut milk), and salt. Carefully return 80% of the fried cashews to the pot, saving the rest for garnish.
Step 6: Cook and Rest Cover with a tight lid and cook on the lowest heat for 10-12 minutes until all the liquid is absorbed. Turn off the heat and let the pot sit unopened for 5-10 minutes. Fluff with a fork and garnish with the remaining golden cashews.
3. What are the Health Benefits?
- Brain and Nervous System: Cashews are loaded with magnesium, zinc, and healthy fats that directly nourish brain tissues and ease anxiety.
- Grounding Energy: The density of the nuts and ghee provides an intense grounding (Vata-pacifying) effect, ideal for cold weather or physical exhaustion.
- Heart Health: High amounts of oleic acid found in cashews promote a strong cardiovascular system when eaten in moderation.
4. Who Can Avoid?
- Heavy Digestion (High Kapha): Due to the high fat content (ghee + cashews), this dish is very heavy to digest (Guru). Overweight individuals or those with a sluggish liver should consume this as a rare treat.
