Curry Leaf Rice
Detailed Curry Leaf Rice (Karuveppilai Sadam) Recipe (Sattvik Style)
Curry leaves are normally a garnish picked out of the dish, but here they are the star ingredient. This dark green rice dish is an ancient remedy that translates beautifully into a deeply savory, earthy meal.
1. Ingredients
- Rice: 1.5 cups cooked and cooled rice.
- Curry Leaves: 2 tightly packed cups of fresh, green curry leaves (washed and dried).
- Oil: 2 tablespoons sesame oil.
- Urad Dal: 1 tbsp.
- Chana Dal: 1 tbsp.
- Black Peppercorns: 1 tsp.
- Cumin Seeds: 1 tsp.
- Dried Red Chilies: 2-3.
- Tamarind: A very small, marble-sized piece (soaked in a tiny splash of water if dry).
- Mustard Seeds: 1 tsp.
- Cashews: 2 tbsp (for garnish).
- Hing (Asafoetida): 1/4 tsp.
- Salt: To taste.
2. How to Cook - Step-by-Step Guidance
Step 1: Roast the Greens Heat a drop of oil in a pan. Roast the fresh curry leaves on very low heat until they turn crisp and lose all moisture. They should easily crumble in your hand. Remove and set aside.
Step 2: Roast the Spices In the same pan, add another drop of oil. Roast urad dal, chana dal, black pepper, cumin seeds, and dry red chilies until golden. Turn off the heat and throw in the small piece of tamarind so it softens in the residual heat.
Step 3: Grind the Spice Base Once cooled, transfer the spices and the crisped curry leaves to a blender. Grind into a semi-fine, dark green-black powder. (This is Karuveppilai Podi).
Step 4: The Final Tempering Heat the remaining sesame oil in the pan. Add mustard seeds. When they pop, add cashews and fry until golden brown. Add hing.
Step 5: Mix with Rice Turn off the heat. Add the cooked rice, salt, and 3-4 tablespoons of your freshly ground curry leaf powder. Gently mix. Save any leftover powder in an airtight jar for later use!
3. What are the Health Benefits?
- Hair Health Hero: Curry leaves are celebrated in Ayurveda for preventing premature graying and promoting thick, lustrous hair growth.
- Iron & Folic Acid: Deeply rich in iron and folic acid, making it excellent for fighting anemia.
- Blood Sugar Control: Proven to naturally regulate blood sugar levels, making it highly beneficial for pre-diabetics.
- Digestive Cleanser: Flushes out toxins from the stomach and intestinal tract.
4. Who Can Avoid?
- Virtually None: Because this recipe relies on a very balancing combination of spices, it is tridoshic (balances Vata, Pitta, and Kapha). However, eat in moderation if suffering from acute constipation.
