Why No Onion & Garlic

Cooking Rich, Creamy Gravies Without Onion and Garlic

16. Cooking Rich, Creamy Gravies Without Onion and Garlic

The Culinary Challenge

Commercial Indian restaurants rely heavily on a boiled onion-garlic paste to create volume, thickness, and body for gravies. When beginners transition to sattvik cooking, their gravies sometimes turn out watery.

How do master temple cooks achieve thick, luxurious, restaurant-quality gravies without touching a single onion?

6 Traditional Sattvik Gravy Bases

1. The Tomato-Cashew Base (Makhani Style):

  • Soak cashews (or melon seeds / char-magaz) in warm water for 20 minutes, then grind into a silky-smooth cream.
  • Puree ripe, red tomatoes with a thumb of ginger and a green chili.
  • Saute in ghee with cumin seeds and a pinch of hing. Add spices and blend with the cashew cream.
  • Result: An ultra-velvety, royal gravy perfect for Shahi Paneer, Koftas, and Navratan Korma.

2. Roasted Chickpea Flour (Besan Kadhi Base):

  • Roast 1-2 tablespoons of besan (gram flour) in ghee until fragrant and golden.
  • Whisk into fresh yogurt or tomato gravy.
  • Result: Instant thickness, nutty aroma, and wonderful body for dals, kadhis, and vegetable curries.

3. Fresh Coconut & Poppy Seed Base (South Indian / Bengali Style):

  • Grind fresh grated coconut with soaked white poppy seeds (posto), ginger, and green chilies.
  • Simmer gently with seasonal vegetables and temper with mustard seeds and curry leaves.
  • Result: Rich, aromatic gravies that are light on the stomach and deeply nourishing.

4. Boiled Pumpkin or Bottle Gourd Base:

  • Boil peeled yellow pumpkin or bottle gourd (lauki), then puree into a smooth sauce.
  • Season with roasted cumin, coriander, and hing.
  • Result: Naturally sweet, thick, nutrient-dense base that completely replicates the volume and sweetness of caramelized onions.

5. Khoya / Mawa or Fresh Malai Base:

  • Add fresh clotted cream (malai) or unsweetened evaporated milk solids (khoya) directly to gravies.
  • Delivers unmatched richness for celebratory festival feasts.

6. Whisked Curd (Dahi) Base:

  • Beat fresh whole milk yogurt with coriander powder and turmeric before adding to tempered spices on low heat.
  • Imparts a tangy, luxurious consistency without any acidity from vinegar.
