Mango Rice

Detailed Raw Mango Rice Recipe (Sattvik Style)

Raw Mango Rice celebrates the arrival of spring and early summer. Its tart, vibrant flavor wakes up the palate and provides a massive boost of Vitamin C without relying on lemons or tomatoes.

1. Ingredients

  • Rice: 2 cups of cooked and cooled rice.
  • Raw Green Mango: 1 medium-sized, firm raw mango (peeled and freshly grated).
  • Oil/Ghee: 2 tablespoons (sesame oil or coconut oil works beautifully).
  • Mustard Seeds: 1 tsp.
  • Chana Dal & Urad Dal: 1 tablespoon each.
  • Peanuts: 1/4 cup (roasted).
  • Green Chilies: 2-3 (slit).
  • Dried Red Chilies: 2 (broken).
  • Ginger: 1/2 inch (minced).
  • Turmeric Powder: 1/2 tsp.
  • Curry Leaves: 1-2 sprigs.
  • Hing (Asafoetida): A generous pinch.
  • Salt: To taste.

2. How to Cook - Step-by-Step Guidance

Step 1: Prep the Mango Ensure the raw mango is firm and highly tart. Grate it using a medium grater. If it is overwhelmingly sour, you might not use the entire mango.

Step 2: The Nutty Tempering Heat oil in a pan. Add mustard seeds and wait for them to pop. Add the chana dal, urad dal, and peanuts. Roast on medium heat until golden brown to ensure a deep crunch.

Step 3: Add Aromatics Add the grated ginger, green chilies, dried red chilies, curry leaves, and hing. Sauté for a few seconds until fragrant.

Step 4: Sauté the Mango Lower the heat. Add the grated raw mango, turmeric powder, and salt. Sauté gently for 3-5 minutes. The mango will soften slightly and release its juices, melding with the turmeric to form a bright yellow, tangy paste. Do not turn it to mush. Turn off the heat.

Step 5: Toss with Rice Add the cooled rice. Gently fold everything together until every grain is yellow and coated with the tangy mango mixture.

3. What are the Health Benefits?

  • Heat Stroke Prevention: Raw mango acts as a powerful natural coolant and prevents dehydration and heat exhaustion during peak summer.
  • Vitamin C powerhouse: Helps in boosting immune defenses naturally.
  • Liver Health: Supports liver function and helps stimulate the secretion of bile.

4. Who Can Avoid?

  • Severe Throat Infections: High doses of extreme sourness (tartness) from raw mango can sometimes irritate an active dry cough or sore throat.
  • Joint Pain (Vata): Ayurveda cautions against excessive sour foods for those suffering from severe arthritis or joint pain.
