Mint Rice
Detailed Mint Rice (Pudina Sadam) Recipe (Sattvik Style)
Mint Rice is exceptionally refreshing and incredibly aromatic. Often served in temples and spiritual gatherings during the hot summer months, the use of fresh mint acts as a natural relaxant and digestive aid.
1. Ingredients
- Rice: 1.5 cups of Sona Masoori or Basmati (cooked and cooled).
- Fresh Mint (Pudina): 1 large bunch (leaves only, washed).
- Fresh Coriander: A small handful (for balancing the intense mint flavor).
- Green Chilies: 2-3 (adjust to taste).
- Ginger: 1/2 inch piece.
- Fresh Coconut: 2 tablespoons (grated).
- Ghee/Oil: 2 tablespoons.
- Mustard Seeds: 1 tsp.
- Urad Dal & Chana Dal: 1 tsp each.
- Lemon Juice: 1 teaspoon (optional).
- Salt: To taste.
2. How to Cook - Step-by-Step Guidance
Step 1: Make the Mint Paste In a blender, combine the fresh mint leaves, coriander leaves, ginger, green chilies, and coconut. Add a very tiny splash of water and blend into a smooth, bright green puree.
Step 2: The Tempering Heat ghee or oil in a pan. Add the mustard seeds. Once they splutter, add the urad and chana dal. Fry until golden and nutty.
Step 3: Sauté the Paste Pour the mint puree into the pan. Add salt. Sauté on low heat for about 3 minutes. Crucial: Do not overcook mint, as it can turn bitter and lose its refreshing green color. You only want to cook out the 'raw' bite of the ginger and chilies.
Step 4: Mix with Rice Turn off the heat. If using, stir in the lemon juice now. Add the cooled rice to the pan and gently fold it into the mint mixture.
Step 5: Garnish and Serve Cover and let it rest for a few minutes so the rice absorbs the incredible minty aroma.
3. What are the Health Benefits?
- Digestive Relief: Mint is world-renowned for settling upset stomachs, relieving nausea, and easing irritable bowel symptoms.
- Cooling Herb: Mint actively cools the body, making it an essential summer dish to pacify Pitta dosha.
- Breath Freshener: The essential oils in mint naturally combat bad breath and oral bacteria.
4. Who Can Avoid?
- Severe GERD: Though mint is cooling, for some individuals with severe acid reflux, mint can actually relax the esophageal sphincter, exacerbating heartburn. In such rare cases, favor coriander rice instead.
