Coriander Rice
Detailed Coriander Rice (Kothamalli Sadam) Recipe (Sattvik Style)
Coriander Rice is a fragrant, green, herbaceous rice dish. It is extremely light on the stomach, refreshing, and leverages the cooling properties of fresh cilantro.
1. Ingredients
- Rice: 1.5 cups of cooked and cooled rice (Basmati or Sona Masoori).
- Fresh Coriander (Cilantro): 1 large, densely packed bunch (washed thoroughly with stems).
- Green Chilies: 2-3 (adjust to heat preference).
- Ginger: 1/2 inch piece.
- Fresh Coconut: 2 tablespoons grated (optional but adds creaminess).
- Oil/Ghee: 2 tablespoons.
- Mustard Seeds: 1 teaspoon.
- Urad Dal: 1 teaspoon.
- Cashews/Peanuts: 2 tablespoons for crunch.
- Lemon Juice: 1 tablespoon (optional, for a tangy kick).
- Salt: To taste.
2. How to Cook - Step-by-Step Guidance
Step 1: The Green Paste In a blender, combine the fresh coriander leaves (and tender stems, which hold immense flavor), ginger, green chilies, and fresh coconut. Add just a tablespoon or two of water and blend into a smooth, vibrant green paste.
Step 2: The Tempering Heat oil or ghee in a pan. Add the mustard seeds and let them splutter. Add the urad dal and the cashews or peanuts. Fry until they turn golden brown.
Step 3: Cook the Paste Pour the blended green paste into the pan. Add salt. Sauté on medium-low heat for about 3-4 minutes. You want to cook off the raw herbaceous smell, but do not overcook it, or it will lose its bright green color and turn dark/bitter.
Step 4: Toss with Rice Turn the heat to the lowest setting. Add the cooked, cooled rice to the pan. Gently fold the rice into the green paste until evenly mixed.
Step 5: Final Touches Turn off the heat. If you desire a slightly tangier profile, squeeze the lemon juice over the top and mix once more. Serve warm.
3. What are the Health Benefits?
- Heavy Metal Detox: Coriander is scientifically famous for its ability to bind to heavy metals in the body and flush them out.
- Cooling Herb: It is one of the best herbs for pacifying Pitta (heat, inflammation, acidity) in the body.
- Kidney Support: Coriander supports the kidneys and acts as a mild, natural diuretic, helping to clear out urinary tract infections.
- Digestive Soother: Excellent for settling an upset stomach and reducing gas/bloating.
4. Who Can Avoid?
- Vata Aggravation: Because coriander is very cooling and light, individuals with extreme Vata aggravation (chronic cold, dry skin, severe joint stiffness) should balance the meal with heavier, warming foods.
