Sweet Pongal
Detailed Sweet Pongal (Chakkara Pongal) Recipe (Sattvik Style)
Sweet Pongal is the crowning glory of South Indian temple offerings (Prasadam). Made with freshly harvested rice, yellow moong dal, and dark jaggery, it is slow-cooked into an incredibly rich, sticky, and highly aromatic divine pudding.
1. Ingredients
- Raw Rice (preferably Sona Masoori or Seeraga Samba): 1/2 cup.
- Yellow Moong Dal (Split Green Gram): 1/4 cup.
- Dark Jaggery (crushed): 1.5 cups (dark, unrefined jaggery gives the best color and traditional flavor).
- Water: 3 cups (for cooking the rice/dal) + 1/2 cup (for melting jaggery).
- Pure Cow Ghee: 1/4 cup to 1/3 cup.
- Green Cardamom Powder: 1 teaspoon.
- Edible Camphor (Pacha Karpuram): A tiny, mustard-seed-sized pinch.
- Cashews and Raisins: 3 tablespoons (fried in ghee).
2. How to Cook - Step-by-Step Guidance
Step 1: The Dry Roast In a pressure cooker or heavy pan, dry roast the yellow moong dal on low heat until it turns light golden and highly aromatic. Wash the raw rice, add it to the dal, and wash them together once more.
Step 2: The Mushy Cook Add 3 cups of water to the rice and dal. Pressure cook for 4-5 whistles on medium heat. It must be cooked far beyond completely—it must be extremely mushy and easily mashable into a paste with the back of a ladle.
Step 3: The Jaggery Syrup While the rice cooks, place the crushed jaggery in a pan with 1/2 cup of water. Heat gently until the jaggery completely dissolves into a syrup. You do not need string consistency, just complete dissolution. Filter this syrup through a fine strainer to remove impurities (dirt or sand often found in raw jaggery).
Step 4: The Sacred Union Mash the hot cooked rice and dal thoroughly. Pour the filtered jaggery syrup into the mashed mixture. Place IT back on low heat. Stir continuously for 5-7 minutes as the grains absorb the dark syrup and the mixture thickens into a glossy, gooey mass.
Step 5: The Ghee Finish Pour the ghee abundantly over the hot pongal. Add the cardamom powder, the tiny speck of crushed edible camphor, and the fried cashews and raisins. Turn off the heat and offer it while blazing hot.
3. What are the Health Benefits?
- Iron and Mineral Rich: Dark, unrefined jaggery is loaded with iron, magnesium, and potassium, acting as a natural blood purifier.
- Balanced Nutrition: The exact ratio of rice and lentil creates a complete protein profile, making it a functional, highly nutritious meal-dessert.
4. Who Can Avoid?
- Heaviness/Lethargy: Due to the intense combination of complex carbohydrates, dark sugars, and heavy ghee, it induces extreme lethargy and sleepiness, so avoid eating a massive portion right before any demanding intellectual work.
