Vegetable Pulao

Detailed Vegetable Pulao Recipe (Sattvik Style)

Vegetable Pulao (or Pilaf) is a one-pot dish where fragrant Basmati rice is cooked together with an array of fresh, colorful vegetables and mild whole spices.

1. Ingredients

  • Rice: 2 cups of long-grain Basmati rice (washed and soaked for 20 mins).
  • Vegetables (Chopped): 1.5 cups mixed (carrots, green beans, peas, cauliflower florets).
  • Ghee/Oil: 3 tablespoons.
  • Whole Spices: 1 tsp cumin seeds (jeera), 1 bay leaf, 2-3 green cardamoms, 1-inch cinnamon stick, 3-4 cloves.
  • Aromatics: 1tbsp ginger-green chili paste.
  • Cashews/Raisins: 2 tablespoons (optional, for garnish).
  • Water: 3.5 to 4 cups (depending on the rice age).
  • Salt: 1.5 teaspoons (or to taste).
  • Herbs: Fresh coriander and mint leaves (a small handful).

2. How to Cook - Step-by-Step Guidance

Step 1: Prep and Soak Wash the Basmati rice gently until the water runs clear. Soak it for exactly 20-30 minutes, then drain completely. Chop all vegetables to a uniform size.

Step 2: Bloom the Spices Heat ghee in a heavy-bottomed pot. If using cashews and raisins, shallow fry them until golden and remove. In the same ghee, add the whole spices. Sauté for 30 seconds until the aroma fills the air.

Step 3: Sauté the Aromatics and Veggies Add the ginger-green chili paste and sauté for a few seconds. Do not let it burn. Add the mixed vegetables and sauté for 2-3 minutes on medium heat to lightly roast them in the spiced ghee.

Step 4: Roast the Rice Add the drained rice. Very gently fold the rice into the vegetables and ghee. Roast for 2 minutes to coat the grains—this prevents stickiness. Toss in half the mint and coriander leaves.

Step 5: Simmer and Cook Pour in the boiling water and add salt. Give it a gentle stir. Bring the mixture to a rolling boil, then reduce the heat to the absolute lowest setting.

Step 6: The 'Dum' (Steaming) Cover the pot tightly with a lid (you can seal the edges with dough or a heavy weight on top). Let it cook undisturbed for 10-12 minutes. Turn off the heat and let it rest for another 5 minutes before opening. Fluff gently with a fork and garnish with fried cashews, raisins, and the remaining herbs.

3. What are the Health Benefits?

  • Balanced Nutrition: Combines complex carbohydrates with essential vitamins and fiber from multiple vegetables in a single meal.
  • Gentle Spicing: Unlike heavy biryanis, the subtle whole spices here stimulate digestive enzymes without causing acidity or Pitta imbalance.
  • Sustained Energy: The combination of ghee and grains provides a slow, steady release of energy.

4. Who Can Avoid?

  • Weak Digestion: While generally wholesome, eating large quantities of Pulao at night can be heavy. In such cases, lighter khichdi is preferred.
