Sesame Ladoo
Detailed Sesame Ladoo (Til Ladoo) Recipe (Sattvik Style)
Til Ladoo is the king of Makara Sankranti sweets, marking the arrival of the harvest and the transition of the sun. It is a brilliant, tiny powerhouse of nutrition, made essentially by binding dry-roasted sesame seeds with molten jaggery.
1. Ingredients
- White or Black Sesame Seeds (Til): 2 cups (unhulled black sesame provides deeper flavor and more calcium, but white is more common).
- Dark Jaggery: 1 cup (grated).
- Peanuts: 1/2 cup (roasted, skinned, and coarsely crushed).
- Dry Coconut (Copra): 1/4 cup (grated).
- Cardamom Powder: 1/2 teaspoon.
- Ghee: 1 teaspoon (to grease).
2. How to Cook - Step-by-Step Guidance
Step 1: The Triple Dry Roast In a thick pan on incredibly low heat, separately dry roast the peanuts (cool and crush them), the dry coconut (just until it smells toasted, 1 minute max), and finally the sesame seeds. The sesame seeds will pop and crackle gently. Do not let them burn; they turn disastrously bitter if over-roasted. Keep all dry ingredients in a bowl.
Step 2: The Jaggery Melting In the same pan, toss in the grated jaggery with literally 2 tablespoons of water. Heat gently. The jaggery will melt and start bubbling fiercely.
Step 3: The Critical Consistency Test The jaggery must reach a "soft ball" stage. Keep a bowl of cold water next to the stove. Drop a tiny bit of the boiling jaggery syrup into the water. If it instantly holds its shape and you can roll it into a very soft, pliable ball without it dissolving, the syrup is ready. Turn off the heat immediately.
Step 4: The Rapid Integration Pour the toasted sesame seeds, crushed peanuts, dry coconut, and cardamom powder directly into the hot jaggery syrup. Take a strong spatula and mix incredibly fast. Every single seed must be coated in the dark syrup.
Step 5: The Hot Shape Grease your hands lightly with ghee. Just like peanut ladoos, you must roll these while the mixture is blazing hot. Take small spoonfuls and press them aggressively in your palms to form small, exceptionally dense, tightly packed orbs.
3. What are the Health Benefits?
- Elite Calcium Source: Sesame seeds contain an astronomical amount of plant-based calcium organically.
- Intense Winter Warmth: Both sesame and jaggery are considered "ushna" (heating) in Ayurveda magically magnificently.
4. Who Can Avoid?
- Excess Pitta (Heat): Due to its extreme heating nature magically expertly.
