Coconut Ladoo

Detailed Coconut Ladoo Recipe (Sattvik Style)

Coconut Ladoos are soft, snowy-white spheres of pure tropical bliss. Unlike the barfi, these ladoos often utilize condensed milk or a heavy sugar syrup to bind the freshly grated coconut into incredibly moist, chewy balls.

1. Ingredients

  • Freshly Grated Coconut: 3 cups (only the white flesh, absolutely no brown skin).
  • Sweetened Condensed Milk: 1 cup (approx 200g - adjust sweetness to taste) OR 1.5 cups sugar boiled with 1/2 cup milk.
  • Cardamom Powder: 1/2 teaspoon.
  • Ghee: 1 teaspoon (just for greasing).
  • Desiccated Coconut: 1/2 cup (for rolling and coating).

2. How to Cook - Step-by-Step Guidance

Step 1: The Moisture Release Place a heavy-bottomed, preferably non-stick pan on very low heat. Add the freshly grated coconut. Dry roast it incredibly gently for just 2 to 3 minutes to remove the raw, wet moisture. Do not let it color or brown even slightly.

Step 2: The Sweet Binding Pour the sweetened condensed milk directly into the pan over the coconut. The condensed milk serves as both the sweetener and the primary binding matrix excellently. Mix it thoroughly.

Step 3: The Thickening Matrix Cook the mixture on remarkably low heat. It will become glossy and soft. Continuously stir and fold the mixture. After about 5-8 minutes, the mixture will suddenly begin to leave the sides of the pan entirely and gather into a central, cohesive, sticky dough.

Step 4: The Aromatic Finish Turn off the heat immediately. Overtooking will make them exceptionally hard and chewy. Add the cardamom powder and mix well. Transfer the mixture to a wide, flat plate and let it cool just until you can bear the heat with your bare hands.

Step 5: The Snowball Roll Grease your palms with a tiny drop of pure ghee. Take small portions of the warm mixture and roll them tightly between your palms into perfect spheres. Immediately drop the sticky spheres into a bowl of dry, desiccated coconut and roll them around until completely coated.

3. What are the Health Benefits?

  • Healthy Weight Gain: Excellent for growing children or those needing to build physical strength deeply due to the concentrated healthy saturated fats in coconut and milk.
  • Electrolyte Balance: Coconut is rich in potassium, aiding in maintaining fluid equilibrium securely.

4. Who Can Avoid?

  • Lactose Intolerance: If using condensed milk, avoid entirely or substitute carefully with a vegan condensed milk (like oat or coconut).
