Almond Barfi

Detailed Almond Barfi (Badam Katli) Recipe (Sattvik Style)

Badam Katli mirrors Kaju Katli but utilizes almonds. It is slightly denser, vastly more fibrous, and boasts a deeply sophisticated, nutty profile. It is a highly revered Sattvik offering due to the supreme purity and energetic quality of almonds.

1. Ingredients

  • Almonds (Badam): 2 cups.
  • Sugar: 1 cup.
  • Water: 1/2 cup.
  • Saffron: A large pinch (soaked in a teaspoon of warm milk).
  • Cardamom Powder: 1/2 teaspoon.
  • Ghee: 1/2 teaspoon.

2. How to Cook - Step-by-Step Guidance

Step 1: The Blanch and Peel Soak the almonds in boiling water for 20 minutes. Drain the hot water. The skins will slip off when you pinch each almond. Spread the peeled, stark white almonds on a clean cotton towel and let them air dry completely for a few hours.

Step 2: The Powdering Just like the cashews, pulse the completely dry almonds in short, sharp bursts. Do not let the almonds release their oils, or it will turn into almond butter. Sift the powder to ensure it is incredibly fine.

Step 3: The Syrup Creation In a thick-bottomed pan, dissolve the sugar in the water. Bring it to a boil and cook until it attains a confident one-string consistency (ek taar chashni). Use the saffron infusion at this stage.

Step 4: The Fudge Formation Add the sifted almond powder to the syrup. Lower the heat to the absolute minimum. Stir continuously. The almond flour will absorb the syrup and form a cohesive paste. Cook for about 6-8 minutes until it leaves the sides of the pan entirely and gathers into a soft, rolling ball. Turn off the heat and stir in the cardamom natively.

Step 5: The Roll and Cut Transfer the dough to a ghee-greased parchment paper. Wait a few moments until you can handle the heat, then knead it very briefly. Lay another piece of parchment on top and roll it out with a rolling pin to a 1/4 inch thickness. Use a sharp knife to cut it into elegant diamond shapes immediately before it fully sets and hardens.

3. What are the Health Benefits?

  • Vata Balancing: Almonds are considered the absolute best nut in Ayurveda for grounding nervous energy (Vata) and deeply nourishing the brain and nervous system natively.
  • Vitamin E: Intensely rich in skin-healing Vitamin E.

4. Who Can Avoid?

  • Very Weak Digestion: Almonds are heavy and dense; however, turning them into flour and cooking them in syrup severely aids their digestibility compared to raw almonds.
