Pineapple Kesari

Detailed Pineapple Kesari Recipe (Sattvik Style)

A phenomenal tropical twist on the classic Rava Kesari, this version incorporates freshly pureed and cubed pineapple. The tartness of the pineapple cuts through the dense ghee and sugar, making it incredibly refreshing and aromatic.

1. Ingredients

  • Semolina (Rava/Suji): 1 cup (roasted gently).
  • Fresh Pineapple: 1 cup (1/2 cup finely pureed, 1/2 cup chopped into very tiny cubes).
  • Sugar: 1.25 cups.
  • Water: 2 cups.
  • Ghee: 1/2 cup (melted).
  • Saffron or Yellow Food Color: A tiny pinch.
  • Cardamom Powder: 1/4 teaspoon (keep it light to let the pineapple shine).
  • Cashews: 2 tablespoons (fried in ghee).

2. How to Cook - Step-by-Step Guidance

Step 1: Cooking the Fruit In a heavy pan, add a teaspoon of ghee and sauté the tiny pineapple cubes for a few minutes until they soften slightly and release their intense aroma. Add the pineapple puree and the water to this pan. Bring it to a rolling boil. Add the saffron or yellow color.

Step 2: Incorporating the Rava Reduce the heat to the lowest setting. Gradually pour the pre-roasted rava into the boiling, fruity water while stirring continuously so no lumps form. Cover and cook for 2 minutes until the rava absorbs all the moisture and cooks through.

Step 3: The Sugar Glaze Add the sugar. The mixture will melt and become a glossy, brightly colored thick liquid. Keep stirring continuously as it thickens back up.

Step 4: The Ghee Emulsion Pour the remaining melted ghee over the Kesari. Fold it in gently until it is fully absorbed and the mixture leaves the sides of the pan without sticking.

Step 5: The Final Fold Turn off the heat. Stir in the cardamom powder and the ghee-roasted cashews. The tiny cooked cubes of pineapple should provide tiny bursts of tart sweetness amidst the soft, rich kesari.

3. What are the Health Benefits?

  • Digestive Enzymes: Fresh pineapple contains Bromelain, an enzyme that aids in the digestion of heavy proteins and fats (like ghee).
  • Vitamin C: Provides a bright burst of Vitamin C and antioxidants compared to conventional sweets.

4. Who Can Avoid?

  • Pitta Dosha Imbalance: Pineapple is intensely acidic and slightly heating; combined with sugar, it might aggravate severe acidity or mouth sores in highly sensitive individuals.
