Rava Kesari

Detailed Rava Kesari (Kesari Bath) Recipe (Sattvik Style)

Rava Kesari is a vibrant, saffron-hued South Indian sweet made from roasted semolina (rava). It is soft, melting, and gloriously rich with ghee, typically served as an offering at temple festivals or special breakfast feasts.

1. Ingredients

  • Semolina (Bombay Rava/Suji): 1 cup.
  • Sugar: 1.25 to 1.5 cups (depending on desired sweetness).
  • Water: 2.5 cups (or use 1 cup milk and 1.5 cups water for extra richness).
  • Ghee: 1/2 cup.
  • Saffron Strands: A generous pinch (soaked in warm water) OR Natural Orange Food Color (a tiny pinch).
  • Cardamom Powder: 1/2 teaspoon.
  • Edible Camphor: A tiny speck (optional, for temple flavor).
  • Cashews and Raisins: 3 tablespoons.

2. How to Cook - Step-by-Step Guidance

Step 1: The Flour Roast Heat two tablespoons of ghee in a pan. Fry the cashews until golden, then the raisins until plump. Keep aside. In the same pan, roast the rava on low-medium heat until it is deeply aromatic but has NOT browned. Transfer to a plate.

Step 2: The Boiling Liquid In the same heavy-bottomed pan, bring the water (or milk-water mixture) to a rolling boil. Add the saffron infusion or the natural color.

Step 3: The Whisking Lower the flame to the absolute minimum. Slowly pour the roasted rava into the boiling liquid with one hand, while continuously and vigorously whisking with the other hand to prevent any lumps from forming. The rava will absorb the liquid and cook almost instantly.

Step 4: The Sweet Melting Once the water is entirely absorbed and the rava is cooked soft, pour in the sugar. The mixture will immediately loosen and become glossy and semi-liquid again. Stir continuously.

Step 5: The Ghee Finish As the kesari begins to thicken again, pour in the remaining ghee gently. It should glisten violently. Add the cardamom powder, edible camphor, and the fried nuts. Stir until it folds over cleanly, leaving the sides of the pan.

3. What are the Health Benefits?

  • Instant Carbohydrates: Provides immediate, sustaining energy through quick-digesting semolina.
  • Sattvik Vibrance: The saffron acts as a powerful antioxidant and mood enhancer.

4. Who Can Avoid?

  • Gluten Allergy: Rava is derived directly from wheat, so it is strictly unsafe for those with gluten intolerances.
