Moong Dal Halwa

Detailed Moong Dal Halwa Recipe (Sattvik Style)

Moong Dal Halwa is a classic, rich, and labor-intensive dessert from Rajasthan. It requires immense patience to roast the ground lentils in ghee until they turn golden and aromatic, resulting in a dense, granular, and intensely flavorful fudge.

1. Ingredients

  • Yellow Split Moong Dal (Pasi Paruppu): 1 cup (soaked for 3-4 hours).
  • Pure Ghee: 3/4 cup (essential for the correct texture; do not skimp).
  • Whole Milk: 1.5 cups.
  • Water: 1.5 cups.
  • Sugar: 1 cup.
  • Saffron Strands: A few pinches (soaked in warm milk).
  • Cardamom Powder: 1/2 teaspoon.
  • Almonds and Pistachios: 2 tablespoons (slivered).

2. How to Cook - Step-by-Step Guidance

Step 1: The Grind Drain the soaked moong dal completely. Grind it to a slightly coarse paste using as little water as possible. A coarse paste gives the halwa its signature granular (danedar) texture.

Step 2: The Saffron Syrup In a separate pan, combine the milk, water, sugar, and saffron. Bring it to a gentle boil until the sugar dissolves completely. Keep it warm on the side.

Step 3: The Intense Roast (Bhunai) Heat the ghee in a heavy, wide non-stick or heavy cast-iron pan. Add the ground moong dal paste. This is the hardest part: you must stir continuously on medium-low heat. Initially, it will clump together and stick heavily. Keep breaking the lumps and roasting. Gradually, it will change color from pale yellow to a deep, sandy golden brown, and the ghee will start separating at the edges. This roasting takes about 25-30 minutes.

Step 4: The Liquid Absorption Carefully pour the warm milk-sugar syrup into the roasted dal (it will splutter). Stir vigorously to prevent any lumps from forming. The dal will rapidly absorb all the liquid and swell up.

Step 5: The Final Sizzle Continue cooking until the halwa thickens, regains its glossy sheen, and leaves the sides of the pan effortlessly. Stir in the cardamom powder and slivered nuts.

3. What are the Health Benefits?

  • Protein Dense Fuel: Moong dal is an excellent source of pure vegetarian protein, making this a highly sustaining dessert.
  • Winter Warmth: The heavy ghee content combined with the roasted lentils provides sustained bodily warmth and energy.

4. Who Can Avoid?

  • Weak Digestion: Due to the exceptionally high ghee and sugar content paired with dense lentil protein, it is very heavy to digest and should be eaten in small, mindful portions.
