Adai (lentil dosa)
Detailed Adai (Lentil Dosa) Recipe (Sattvik Style)
Adai is a robust, protein-packed South Indian pancake made from a mixed batter of rice and multiple lentils. It is thicker and more substantial than a regular dosa, richly flavored with red chilies and asafoetida, requiring no fermentation.
1. Ingredients
- Raw Rice: 1/2 cup.
- Idli Rice (Parboiled): 1/2 cup.
- Chana Dal (Split Chickpeas): 1/2 cup.
- Toor Dal (Pigeon Peas): 1/4 cup.
- Urad Dal (Black Gram): 2 tablespoons.
- Moong Dal (Green Gram): 2 tablespoons.
- Dried Red Chilies: 4-5 (adjusted to heat preference).
- Ginger: 1 inch piece.
- Asafoetida (Hing): 1/2 teaspoon.
- Curry Leaves: 1 sprig (roughly chopped).
- Salt: To taste.
- Water: As needed for soaking and grinding.
- Cold-Pressed Sesame Oil or Ghee: For cooking.
2. How to Cook - Step-by-Step Guidance
Step 1: The Soak Wash all the rice and lentils together until the water runs clear. Soak them in plenty of fresh water along with the dried red chilies for 3 to 4 hours.
Step 2: The Grind Drain the water carefully. Transfer the mixture to a blender along with ginger, hing, and salt. Grind it incrementally to a slightly coarse, thick batter (it should not be as smooth as regular dosa batter). Add minimal water during grinding.
Step 3: The Seasoning Transfer the batter to a bowl. Mix in the finely chopped curry leaves. Adai batter is ready immediately; no fermentation is required.
Step 4: The Pour and Cook Heat a cast-iron tawa until hot. Pour a ladleful of the thick batter in the center and spread it in a concentric circular motion, keeping it slightly thicker than a standard dosa. Make a small hole in the center. Drizzle a generous amount of cold-pressed sesame oil or ghee around the edges and in the center hole. Cook on medium heat until the bottom is a deep, crisp reddish-brown. Flip and cook the other side for another minute.
3. What are the Health Benefits?
- Exceptional Protein Matrix: The diverse combination of four different lentils yields an incredibly high and biologically complete protein profile.
- Sustained Energy: The complex carbohydrates from the mixed lentils and rice provide slow-release energy without sudden insulin spikes.
4. Who Can Avoid?
- Weak Digestion: Due to its high protein and fiber density, Adai can be heavy to digest. It should be avoided late at night or paired heavily with ginger and hing to aid digestion.
