Khandvi

Detailed Khandvi Recipe (Sattvik Style)

Khandvi is a delicate, savory Gujarati snack made from a cooked batter of gram flour and yogurt, rolled tightly into thin layers. It is exceptionally light, gluten-free, and steamed rather than fried, making it an ideal Sattvik appetizer.

1. Ingredients

  • Gram Flour (Besan): 1 cup (sieved to prevent lumps).
  • Yogurt (Curd): 1 cup (whisked smooth; slightly sour works best).
  • Water: 2 cups.
  • Ginger Paste: 1/2 teaspoon.
  • Green Chili Paste: 1/2 teaspoon.
  • Turmeric Powder: 1/4 teaspoon (for a vibrant yellow color).
  • Asafoetida (Hing): A tiny pinch.
  • Salt: To taste.
  • For Tempering: 1 tablespoon oil, 1 teaspoon mustard seeds, 1 teaspoon sesame seeds, 1 sprig curry leaves.
  • For Garnish: Freshly grated coconut and chopped coriander.

2. How to Cook - Step-by-Step Guidance

Step 1: The Batter In a large, heavy-bottomed pan, combine the besan, yogurt, water, ginger paste, green chili paste, turmeric, hing, and salt. Whisk vigorously until absolutely smooth and free of any lumps.

Step 2: The Cook Place the pan on low heat. Stir continuously without stopping for about 10-15 minutes. The mixture will begin to thicken and turn glossy. It must be cooked until it leaves the sides of the pan and doesn't taste raw.

Step 3: The Spread Instantly pour the hot mixture onto the back of greased steel plates or a clean, smooth countertop. Using a flat spatula, spread it immediately as thin as possible. Let it cool for 3-5 minutes.

Step 4: The Roll Make straight cuts about 1.5 inches apart. Gently lift one end of each strip and roll it up tightly. Place the rolls on a serving platter.

Step 5: The Tempering Heat oil in a small pan. Add mustard seeds, let them crackle, then add sesame seeds and curry leaves. Pour this hot tempering over the rolled Khandvi. Highlight with grated coconut and coriander.

3. What are the Health Benefits?

  • High Protein: Besan provides excellent plant-based protein, crucial for a vegetarian diet.
  • Probiotic Qualities: The fermented yogurt aids in gut health and digestion.
  • Low Calorie: Being steamed and inherently low in fat, it is excellent for weight management.

4. Who Can Avoid?

  • Dairy Sensitivity: Those with severe lactose intolerance should substitute yogurt with a plant-based alternative or avoid it altogether.
