Rava Upma

Detailed Rava Upma (Plain Upma) Recipe (Sattvik/Temple Style)

Plain Rava Upma strips away the complexities of vegetables. It relies strictly on the phenomenal, unadulterated combination of exquisitely roasted semolina, violent ginger-green chili tempering, and a monumental amount of fresh ghee.

1. Ingredients

  • Rava (Semolina/Sooji): 1 cup (coarse).
  • Ghee: 3 tablespoons (this defines the entire dish since there are no vegetables to add moisture).
  • Mustard Seeds: 1 tsp.
  • Urad Dal: 1 tsp.
  • Chana Dal: 1 tsp.
  • Cashew Nuts: 10-12 (split).
  • Ginger: 1 inch (finely grated).
  • Green Chilies: 2-3 (finely minced).
  • Curry Leaves: A massive sprig.
  • Hing (Asafoetida): 1/4 tsp.
  • Water: Precisely 2.5 cups.
  • Lemon Juice: 1 tablespoon.
  • Fresh Coriander: Generous handful.
  • Salt: To taste.

2. How to Cook - Step-by-Step Guidance

Step 1: The Dry Roast Heat 1 tablespoon of ghee. Roast the rava meticulously on medium-low heat for exactly 6-8 minutes. It must shift from white to pale, sandy gold. The aroma should mimic freshly baked biscuits. Remove to a plate.

Step 2: Fry the Cashews In a heavy pot, heat the remaining ghee. Fry the cashews until golden brown. Leave them in the pot.

Step 3: The Bold Tempering Right over the cashews, add mustard seeds to violently crackle. Add the urad and chana dal. Sauté rapidly until the lentils are toasted heavily to a dark brown crunch.

Step 4: The Aromatic Sizzle Throw in the minced ginger, minced green chilies, massive handful of curry leaves, and hing. The heat and oil will instantly turn the curry leaves crispy.

Step 5: The Saline Boil Immediately pour 2.5 cups of water into the boiling, spiced ghee. Add salt. The water should taste slightly saltier than the sea (the rava will absorb it all). Bring to a raging boil for 1 minute.

Step 6: The Incorporation Reduce the heat to low. Stream the roasted rava in swiftly with one hand while aggressively whisking the water continuously with the other. Once it thickens (about 10 seconds), cover tightly for 2 minutes to steam. Turn off the heat, add lemon juice and coriander, and serve incredibly hot.

3. What are the Health Benefits?

  • Digestive Fire Stimulant: The incredibly heavy dosage of minced ginger natively stokes the Agni (digestive fire), ensuring the heavy wheat starch is processed swiftly without forming Ama (toxins).
  • Ojas Replenishment: The reliance on pure ghee natively builds immunity, ocular health, and heavily lubricates dry joints inside the body.
  • Rapid Satiation: Keeps the appetite firmly suppressed for hours due to its dense starch and fat matrix.

4. Who Can Avoid?

  • Celiac Disease: 100% wheat-based. Must be strictly avoided by anyone with severe gluten intolerances.
  • Weight Management: Consists natively of heavy carbohydrates submerged in saturated fat. Avoid if on strict caloric deficits.
