Cauliflower Coconut Curry

Detailed Cauliflower Coconut Curry (Gobi Kurma) Recipe (Sattvik Style)

Cauliflower Coconut Curry (Gobi Kurma) is an exquisitely luxurious, thick, and highly aromatic South Indian gravy. Instead of thin tomato broths, the cauliflower florets are submerged and simmered in a majestic roasted coconut and fennel seed paste.

1. Ingredients

  • Cauliflower (Gobi): 1 medium head (broken into large florets, blanched in hot turmeric water).
  • Tomato: 1 medium (finely chopped).
  • Coconut Oil or Ghee: 2 tablespoons.
  • Whole Spices: 1 inch cinnamon, 2 cloves, 1 bay leaf.
  • Curry Leaves: A sprig.
  • Salt: To taste.
  • Fresh Coriander: Handful.
  • For the Coconut Kurma Paste:
    • 1/2 cup Fresh Coconut (grated)
    • 6 Cashews or 1 tbsp Roasted Chana Dal (Pottukadalai) for thickening
    • 1 tsp Fennel Seeds (Saunf - Critical for aroma)
    • 1/2 tsp Cumin Seeds
    • 2 Green Chilies
    • 1 inch Ginger
    • 1/4 tsp Turmeric Powder

2. How to Cook - Step-by-Step Guidance

Step 1: Prepare the Royal Paste In a heavy blender, grind the fresh coconut, cashews or chana dal, fennel seeds, cumin, green chilies, ginger, and turmeric with a splash of water into an exceptionally thick, velvet-smooth paste.

Step 2: Bloom the Whole Spices Heat the coconut oil (or ghee) in a heavy pot. Drop in the cinnamon, cloves, bay leaf, and fresh curry leaves. Allow them to crackle and violently release their aromatic oils for 15 seconds.

Step 3: The Tomato Base Add the chopped tomato. Sauté it on medium heat until it collapses softly into a rough, mushy paste (about 4 minutes).

Step 4: Simmer the Coconut Paste Pour the gorgeously thick, fragrant coconut-fennel paste into the pot. Lower the heat. Sauté it incredibly gently for just 3-4 minutes to barely cook the raw ginger and completely release the coconut oils. Do not let it boil aggressively yet, and do not let it turn brown.

Step 5: Introduce the Cauliflower Drop the blanched cauliflower florets into the thick paste. Add salt. Add about 1 cup of warm water until you achieve the desired Kurma consistency (it should be thick and clingy). Mix remarkably gently so you don't break the massive florets.

Step 6: The Submerged Cook Cover the pot. Simmer on low heat for 8-10 minutes. The cauliflower will act like an absolute sponge, drinking up the sweet, spicy coconut broth. Turn off the heat, garnish heavily with coriander, and serve hot.

3. What are the Health Benefits?

  • Nervous System Sedative: The heavy reliance on fennel seeds natively sedates an overworked, exhausted nervous system, promoting intense physical calmness post-meal.
  • Mucous Regulator: The heavily spiced coconut milk acts directly upon the respiratory system, soothing asthma and loosening damp, cold coughs (Kapha imbalances).
  • Immense Vitality: The medium-chain triglycerides in the fresh coconut provide instant brain and muscle energy without storing as fat natively.

4. Who Can Avoid?

  • High Cholesterol Regimes: Because this dish is densely packed with saturated fats from the coconut and the cashews/ghee, it natively represents a heavy (Guru) meal. High cholesterol patients should modify the recipe to use exceptionally scanty amounts of coconut oil.
