Cauliflower Peas Sabji

Detailed Cauliflower Peas Sabji (Gobi Matar) Recipe (Sattvik Style)

Gobi Matar is the quintessential North Indian winter comfort food. The dense, slightly nutty florets of the cauliflower perfectly counterbalance the bursting, bright sweetness of the green peas in a dry-roasted, highly spiced masala.

1. Ingredients

  • Cauliflower (Gobi): 1 medium head (cut into medium florets, washed in hot turret water).
  • Green Peas (Matar): 1 cup (fresh or thoroughly thawed frozen).
  • Tomatoes: 2 medium (pureed into a paste).
  • Ghee or Light Oil: 2 tablespoons.
  • Cumin Seeds: 1 tsp.
  • Ginger: 1 inch (finely grated).
  • Green Chili: 1 (slit).
  • Turmeric Powder: 1/2 tsp.
  • Coriander Powder: 1.5 tsp.
  • Kashmiri Red Chili Powder: 1/2 tsp.
  • Amchur (Dry Mango Powder): 1/2 tsp.
  • Garam Masala: 1/4 tsp.
  • Kasuri Methi: 1 tsp (crushed).
  • Salt: To taste.
  • Fresh Coriander: A handful.

2. How to Cook - Step-by-Step Guidance

Step 1: Pan-Roast the Gobi In a wide Kadai, heat 1 tablespoon of ghee. Add the cauliflower florets and toss them on high heat for 5-7 minutes. You want them to shrink slightly and develop distinct brown, roasted spots. Remove them to a plate. (This keeps them completely firm during the final simmer).

Step 2: Start the Tomato Masala In the same pan, heat the remaining ghee. Add cumin seeds. Once they splutter, add the ginger and green chili for a quick sauté. Immediately pour in the tomato puree.

Step 3: Bloom the Spices Add the turmeric, coriander powder, chili powder, and salt directly into the bubbling tomato puree. Cook this firmly on medium heat for 5-6 minutes until the thick paste begins to release its oils at the borders.

Step 4: Marry the Vegetables Toss the roasted cauliflower florets and the green peas into the thick tomato masala. Mix meticulously so the crimson paste coats every crevice. Add just 1/4 cup of water to create steam.

Step 5: The Final Steam Cover the Kadai tightly. Drop the heat to the absolute lowest. Simmer for just 5-7 minutes until the peas are sweet and bright, and the cauliflower is fork-tender but not mushy.

Step 6: Flavor Burst Finish Remove the lid. Evaporate any extra water on high heat. Turn off the heat entirely. Heavily dust the sabji with Amchur, Garam Masala, Kasuri Methi, and fresh coriander. Toss securely and serve.

3. What are the Health Benefits?

  • Protein and Vitamin C Union: The peas deliver massive protein while the cauliflower offers insane Vitamin C levels. Uniting them creates an unparalleled winter immunity shield.
  • Ocular Defense: The green peas contain incredibly high quantities of lutein, which natively acts as an internal protective filter for ocular (eye) health.
  • Bone Integrator: Dense with Vitamin K, significantly boosting calcium absorption into the skeletal frame natively.

4. Who Can Avoid?

  • Severe Gas / Bloating (Vata Imbalance): Cauliflower and peas are both highly Vata-aggravating vegetables. If you natively suffer from severe wind or bloating, do not skip the intense roasting step (Step 1) or the ginger/cumin tempering, as these specifically break down the gas-producing compounds.
