Vegetable Kurma
Detailed Vegetable Kurma (South Indian Hotel Style) Recipe (Sattvik Style)
Vegetable Kurma is a deeply aromatic, luxurious, white-or-yellow gravy famously served with hot pooris, chapatis, or parottas. Without heavy pungent onions, the flavor rests entirely on a sweet, spiced coconut and cashew paste.
1. Ingredients
- Mixed Vegetables: 2.5 cups (carrots, green beans, potatoes, and cauliflower florets cut into uniform small pieces).
- Green Peas: 1/2 cup.
- Ghee or Coconut Oil: 1.5 tablespoons.
- Whole Spices: 1 inch cinnamon, 2 cloves, 2 cardamom pods, 1 bay leaf.
- Salt: To taste.
- For the Thick Kurma Paste:
- 1/2 cup Fresh Coconut (grated)
- 8 to 10 Cashew Nuts (soaked for 15 mins)
- 1 tsp Fennel Seeds (Saunf)
- 1 tsp Poppy Seeds (Khus Khus - optional but heavily traditional)
- 2 Green Chilies
- 1 inch Ginger
- 1/2 tsp Turmeric Powder (skip if you want a white kurma, add if you want yellow)
2. How to Cook - Step-by-Step Guidance
Step 1: Parboil the Vegetables Boil all the mixed vegetables (carrots, beans, potatoes, peas, cauliflower) in briefly salted water until they are perfectly fork-tender. Drain, but reserve 1 cup of the highly nutritious vegetable stock.
Step 2: The Royal Paste In a blender, combine the fresh coconut, soaked cashews, fennel seeds, poppy seeds, green chilies, and ginger. Add a little water and grind this into an exceptionally smooth, thick, creamy paste. The fennel seeds give the Kurma its signature restaurant aroma.
Step 3: Bloom the Whole Spices Heat the ghee or coconut oil in a thick pan. Add the cinnamon, cloves, cardamom, and bay leaf. Sauté lightly until they swell and release their oils.
Step 4: Cook the Paste Reduce the heat to the absolute lowest setting to prevent the cashews from burning. Pour in the heavily aromatic coconut-cashew paste. Sauté very gently for 3-4 minutes. You just want it to warm through and release its aroma; you do not want it to turn brown.
Step 5: The Simmer Add the boiled vegetables along with the 1 cup of reserved vegetable stock. Add salt. Mix gently.
Step 6: The Final Boil Bring the entire mixture to a gentle boil. Let it simmer for 5 minutes. The luxurious coconut/cashew paste will thicken the stock into a gorgeous, highly clinging gravy. Turn off the heat and heavily garnish with fresh coriander.
3. What are the Health Benefits?
- Nervine Tonic: The combination of cashews, poppy seeds, and fennel heavily sedates an overworked nervous system, providing immediate physical calmness.
- Diverse Nutrition: Offers an enormous, balanced spectrum of vitamins and minerals across five different vegetable families in a singular dish.
- Bone Lubrication: Generous amounts of bioavailable calcium and healthy fats deeply lubricate the skeletal joints.
4. Who Can Avoid?
- High Cholesterol / Weight Loss: Because of the dense cashew paste, coconut, and ghee, Kurma rests very heavily on the stomach and is calorie-dense. Reserve it for celebratory meals or days of high physical assertion.
