Raw Banana Sabji

Detailed Raw Banana Sabji (Vazhakkai Poriyal) Recipe (Sattvik Style)

Raw Banana (Plantain) Sabji is an incredibly soft, starchy, and filling dish. Unlike ripe bananas, the raw versions hold up beautifully to savory spices and tempering, providing a texture very similar to a dense potato but with a distinct, mild sweetness.

1. Ingredients

  • Raw Bananas (Plantains): 2 large, thick raw bananas (skin peeled lightly, chopped into small cubes).
  • Fresh Coconut: 3 tablespoons (grated).
  • Coconut Oil or Cooking Oil: 1.5 tablespoons.
  • Mustard Seeds: 1 tsp.
  • Urad Dal: 1 tsp.
  • Chana Dal: 1 tsp.
  • Green Chilies: 1 to 2 (slit).
  • Ginger: 1/2 inch (finely grated).
  • Turmeric Powder: 1/2 tsp.
  • Curry Leaves: A sprig.
  • Hing (Asafoetida): 1/4 tsp.
  • Salt: To taste.

2. How to Cook - Step-by-Step Guidance

Step 1: Prep to Prevent Blackening Once peeled and chopped, immediately submerge the raw banana cubes in a bowl of water with a pinch of turmeric. This permanently stops them from oxidizing and turning black.

Step 2: The Tempering Heat the oil in a heavy-bottomed pan. Add the mustard seeds. When they pop loudly, add the urad dal and chana dal. Sauté on medium-low heat until the lentils are beautifully toasted and golden-brown.

Step 3: Aromatics Add the grated ginger, green chilies, curry leaves, and a generous pinch of hing. Let them sizzle for 10 seconds.

Step 4: Cook the Plantains Drain the raw banana cubes thoroughly and add them to the pan. Add salt and the remaining turmeric powder. Sauté vigorously on high heat for 3 minutes to lock the shape of the cubes.

Step 5: The Gentle Steam Sprinkle precisely 3 to 4 tablespoons of water over the vegetables to create steam. Cover the pan with a tight lid. Cook on low heat for 8-10 minutes. Raw banana cooks surprisingly quickly compared to potatoes, so check frequently. A fork should pass through easily.

Step 6: The Coconut Finish Once the cubes are perfectly tender and any residual water has evaporated, turn off the heat. Fold the grated fresh coconut into the pan, allowing the warmth of the plantains to heat the coconut beautifully.

3. What are the Health Benefits?

  • Massive Potassium Source: Like their ripe cousins, raw plantains are exceptionally high in potassium, regulating high blood pressure.
  • Starch Synergy: Contains highly resistant starch, which uniquely escapes digestion in the small intestine and acts as a massive prebiotic for healthy gut bacteria.
  • Digestive Cleanser: Effectively treats severe diarrhea due to its binding, starchy nature.

4. Who Can Avoid?

  • Severe Constipation: Raw banana is a highly astringent and binding vegetable natively employed to stop loose bowels. If you natively suffer from chronic, severe constipation, consuming large quantities of plantain will worsen the condition dramatically unless drowned in ghee/oil.
